Alright, alright – I guess you figured out that was a bad attempt playing an April Fool’s Day trick on you :P
The #CookieFriday is back home!! The last months I had many nice bloggers here for Cookie Friday – everytime with a nice recipe for you. Now it’s time again to do it myself! I was a bit.. how you say that in English? On cold turkey? :P No cookies for so long was really hard – unfortunately none of the bloggers sent real cookies along with the recipes – shame on you all! :P I guess I can make up to you and myself with these delicious chocolate chip cookies with a little surprise inside :)
So I guess you read it already – Chocolate chip cookies with brownies inside? Is that for real? How does this work? Well it’s pretty easy actually ;)
You can call them brookies (brownie-cookies) or cookiebros – I call them Brownie Stuffed Chocolate Chip Cookies. Cookie Monster would be proud. And if there was a Brownie Monster – that one would be happy too I guess ;) Not much you can do wrong with that kind of cookies – I guess everybody will like them!
These little fellas are very easy to make – the cookie dough is pretty much a basic one – so if you want to change it to something you like more – feel free. More chocolate or no chocolate at all – absolutely no problem. For the brownies I recommend you use your favorite brownie recipe – I used the one from my Double Chocolate Brownies. You can use them freshly baked or when a day old – just make sure they are moist and not too dry. Oh and use small pieces – worked best for me to use brownie pieces that were cut into flat discs. My first attempt was with bigger brownie pieces – at the end it looked like a cookie had swallowed a big piece of brownie. Not the look we want here – it should still look like a cookie :P
INGREDIENTS / ZUTATEN
1/2 cup (120g) butter
1/4 cup (50g) sugar
1/2 cup (100g) brown sugar
1 tsp. vanilla extract
1 large egg
1 1/2 cups (200g) all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 cup (150g) chocolate chips
12 brownie pieces*
*You can use the recipe for these double chocolate brownies for example
120g Butter
50g Zucker
100g brauner Zucker
1 TL Vanille Extrakt
1 Ei (L)
200g Mehl (Type 405)
1/2 TL Natron
1/2 TL Salz
150g Schokoladendrops
12 Brownie Stücke*
*für die Brownies kann man z.B. dieses Rezept verwenden
DIRECTIONS / ZUBEREITUNG
2. Take about a spoonful of the dough and form a flat disc. Place a piece of brownie (best to cut them into flat slices) on top and cover with another portion of cookie dough (about a spoon) – press together and form a flattened cookie. Place on a plate and continue with the remaining dough and brownies. When done place in the fridge for at least 1 hour or over night.
3. Preheat the oven to 350˚F (175°C). Prepare two baking sheets with baking parchment. Place the cookies on the baking sheets and bake for about 12 minutes – the edges should have a light golden color, but the center should be still a bit soft. Take out of the oven and let cool down on the baking sheets for some time – then transfer to a wire rack and let cool down completely.
2. Vom Teig etwa einen Eßlöffel voll nehmen und zu einer Kugel formen und platt drücken. Ein Stück Brownie (am Besten schneidet man die Brownies in Scheiben) auf den Teig legen, mit etwas mehr Teig bedecken und zu einem flachen Cookie formen. Die Cookies auf einen Teller legen und mit dem restlichen Teig/Brownies noch mehr Cookies formen. Die Cookies für mindestens 1 Stunde in den Kühlschrank legen (oder über Nacht).
3. Den Ofen auf 175°C (350°F) vorheizen. Zwei Backbleche mit Backpapier auslegen. Die Cookies darauf legen und dann im vorgeheizten Ofen für etwa 12 Minuten backen – die Ränder sollten Farbe bekommen haben, aber die Mitte sollte noch etwas weich sein. Aus dem Ofen nehmen und auf den Blechen etwas abkühlen lassen – dann auf ein Kuchengitter legen und komplett auskühlen lassen.

- Add the butter and sugars to a large bowl and beat on high speed until light and fluffy. Add vanilla extract and egg and mix until well combined. In a second bowl mix flour with baking soda and salt. Add to the butter-sugar mixture and mix until just combined. Fold in the chocolate chips.
- Take about a spoonful of the dough and form a flat disc. Place a piece of brownie (best to cut them into flat slices) on top and cover with another portion of cookie dough (about a spoon) – press together and form a flattened cookie.
