- 1/2 cup (120g) butter
- 1/4 cup (50g) sugar
- 1/2 cup (100g) brown sugar
- 1 tsp. vanilla extract
- 1 large egg
- 1 1/2 cups (200g) all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup (150g) chocolate chips
- 12 brownie pieces
Instructions
- Add the butter and sugars to a large bowl and beat on high speed until light and fluffy. Add vanilla extract and egg and mix until well combined. In a second bowl mix flour with baking soda and salt. Add to the butter-sugar mixture and mix until just combined. Fold in the chocolate chips.
- Take about a spoonful of the dough and form a flat disc. Place a piece of brownie (best to cut them into flat slices) on top and cover with another portion of cookie dough (about a spoon) – press together and form a flattened cookie. Place on a plate and continue with the remaining dough and brownies. When done place in the fridge for at least 1 hour or over night.
- Preheat the oven to 350˚F (175°C). Prepare two baking sheets with baking parchment. Place the cookies on the baking sheets and bake for about 12 minutes – the edges should have a light golden color, but the center should be still a bit soft. Take out of the oven and let cool down on the baking sheets for some time – then transfer to a wire rack and let cool down completely.
