Is there anything better than combining two delicious cakes and creating something that’s even better than was there originally? Carrot cake is delicious on its own, so is cheesecake. But what happens if you combine the two? The result is a super delicious (Baked) Carrot Cake Cheesecake that is better than the individual cakes on their own. If you don’t believe it, you simply have to bake it and try it yourself ;P
Carrot cake is one of the most popular cakes here in our house. Not only because they are easy to prepare and always look good – the combination of the carrots, spices, and nuts in the cake is just super delicious! If you go for a “classic” American carrot cake you also need a cream cheese frosting on top (and maybe in between layers). Without that, it’s not a perfect carrot cake. Well… you could say this carrot cake is not perfect, because no real cream cheese is used here, but to be honest… you will not notice the difference ;P
Some of you might know already from previous articles that I was born and raised close to the Swiss border. For a few years, I even lived in Switzerland. That’s probably the reason why I love me some Swiss Carrot Cake aka. Swiss Rüblikuchen. One of the best cakes you that emerged from the Alps with little marzipan carrots on top. Looking at it makes my mouth water every time… must be Pavlovian conditioning :P
It might be a good time to start thinking about Easter and what to bake for that holiday. Easter is not only “around the corner” it basically blocks the isles in the supermarkets everywhere with chocolate Easter bunnies and Easter eggs for weeks already. What are you going to bake? Are you baking? I mean… we are still in lockdown, so there should be enough time to do some baking ;) We are definitely making this delicious Carrot Cake Cheesecake this year. It’s the perfect cake for Easter… really.
Next Saturday, on November 14th, is World Diabetes Day – to draw some attention to this special day I decided to dedicate this week to sugar-reduced and sugar-free recipes. Recipes that are suitable for diabetics, but also good for everyone else ;) Some of you may know – I am a diabetic myself and for me, the topic is quite important ;) That’s why I thought I could show what you can do and how easy it is to reduce or omit the sugar in your diet. Today I’ll start with some delicious Carrot Cake Cupcakes – they are sugar-free and also gluten-free. Oh and really yummy! ;)
If you ask people from all around the world which cake they like the most, you will often get the answer “cheesecake”! In the US you will also find a lot of people that like carrot cakes a lot. Her in Germany we are not that fond of carrot cakes – even though Starbucks does a good job in trying to convince us. Their carrot cake is awesome ;) Anyway. I am a huge carrot cake fan and love to bake it. I am not eating much of it though (because of all the sugar) but my friends and colleagues are very happy each time they get a slice of goodness ;P
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
