It’s Cookie Friday! Yay! Somehow it seems the last Cookie Friday happened just yesterday with these delicious Cookie Truffles – but it is actually a week ago. Maybe it’s because I did not do much in between ;) Well let’s focus on these Mini Cookie Fruit Pizzas now – they are all you need to think about at the moment…
In summer I prefer easy recipes for cooking and baking. This year the weather is really nice so there are many other things to do outside instead of working in the hot kitchen in my apartment. These Mini Cookie Fruit Pizzas are easy and quick to prepare, so there is enough time to do other things as well. Enough time to get a nice tan ;)
The base of these mini pizzas are simple sugar cookies. When making mini pizzas like these here, you can use this recipe as it is or adapt it to our liking. Maybe you want some chocolate chips in there or nuts and dried fruits maybe? All fine – just don’t add too much or they will fall apart after being baked ;)
The topping is a simple cream cheese frosting. When it comes to decorate the mini pizzas you can use whatever you want – blueberries, raspberries, blackberries, kiwi, pineapple, melon etc. – whatever you like or what’s in season at that moment. Guess that is important too ;)
I recommend to finish and decorate the cookies right before serving. If you keep them sitting on your table for too long or store them assembled, the fruits will eventually look bad and sad. You can prepare everything and store the cookies, frosting and the toppings separately for quite some time – that is not the problem – just not everything finished together ;) If you guests are into DIY, you can give them pizzas “deconstructed” so they can finish them themselves. Less work for you, more fun for the guests :P
INGREDIENTS / ZUTATEN
For the dough:
1 cup (230g) butter, softened
1 1/2 cups (300g) sugar
1 large egg
1 large egg yolk
2 tsp. vanilla extract
3 cups (390g) all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
For the frosting/decoration:
1/4 cup (60g) butter
8 oz (230g) cream cheese
pinch of salt
2 cups (260g) confectioners’ sugar
1/2 tsp. vanilla extract
fruits and berries (kiwi, mango, raspberry, blueberry etc.)
Für den Teig:
230g Butter
300g Zucker
1 Ei (L)
1 Eigelb (L)
2 TL Vanille Extrakt
390g Mehl (Type 405)
1 TL Backpulver
1/2 TL Salz
Für das Frosting/Dekoration:
60g Butter
230g Frischkäse
Prise Salz
260g Puderzucker
1/2 TL Vanille Extrakt
Früchte & Beeren (Kiwi, Mango, Himbeeren, Blaubeeren usw.)
DIRECTIONS / ZUBEREITUNG
2. Add the butter and sugar to a large bowl and mix until light and fluffy. Add the egg, egg yolk, and vanilla extract and mix until well combined. Mix the flour with baking powder, and salt and add to the bowl, mix until just combined. Use a cookie scoop (or ice cream scoop) to place dough portions with enough space in between on the baking sheet. Bake for 10-12 minutes. The cookies should not get much of a color and look slightly under-baked. Take out of the oven and let cool down on the baking sheet for some time, then transfer to a wire rack and let cool down completely.
3. Decorate the cookies right before serving. For the frosting mix the butter, cream cheese, and salt until well combined. Add the confectioners’ sugar and vanilla extract and mix well. Place in the fridge until needed. Wash, dry and cut the fruits/berries into smaller pieces. To decorate the cookies, add some of the cream cheese frosting on top of a cookie and top with pieces of fruits and berries. Keep leftovers separately in the fridge and finish more cookies when needed.
2. Die Butter mit dem Zucker in eine große Schüssel geben und hell und luftig aufschlagen. Ei, Eigelb und Vanille Extrakt dazugeben und gut unterrühren. Das Mehl mit Backpulver und Salz vermischen und dann zur Schüssel dazugeben und nur kurz unterrühren, bis sich alles verbunden hat. Mit einem Cookie Scoop (Eisportionierer) etwa 8 Teigportionen mit genügend Abstand zueinander auf das Blech setzen und dann für 10-12 Minuten backen. Die Cookies sollten nur minimal Farbe bekommen und eigentlich etwas “zu wenig gebacken” aussehen – dann sind sie richtig ;) Auf dem Blech etwas abkühlen lassen, sobald man sie bewegen kann auf ein Kuchengitter legen und komplett auskühlen lassen. Mit dem restlichen Teig wiederholen.
3. Die Cookies sollten erst kurz vor dem Servieren fertig dekoriert werden. Für das Frosting die Butter mit dem Frischkäse und Salz verrühren. Puderzucker und Vanille Extrakt dazugeben und gut unterrühren. Bis zur weiteren Verwendung in den Kühlschrank stellen. Die Früchte/Beeren waschen, trocknen und in kleinere Stücke schneiden. Die Cookies dann mit etwas Frischkäsecreme bestreichen und den Früchten/Beeren dekorieren. Macht nur so viele fertig, wie ihr essen wollt – die Creme und Früchte separat in den Kühlschrank stellen und die Cookies in eine Dose und dann je nach Bedarf mehr Cookies dekorieren.
