I have a whole kitchen cabinet just with different spices. That cabinet is so packed, unbelievable! I have to open the door very carefully every time I am looking for something. Chances are really good something is falling out and bumping onto the counter. One of these spices I like to use a lot in fall: Pumpkin Pie Spice. You know – the one for Pumpkin Spiced Latte ;P
I do not know exactly why so many spices have accumulated over the years…. probably because I buy them everywhere I go “just in case I need that particular one sometime” or because “I could try making a dish using that one here”. That’s probably the reason. Is there something like a spice support group for this? ;P
Well… you actually need a certain basic stock of spices if you bake and cook a lot like me. The basics at least. Things I no longer buy are spice mixes. Those have been very popular the last several years, popping up everywhere and for everything – mixes for scrambled eggs, for your oatmeal or smoothie in the morning, plain cinnamon-sugar for your rice pudding (?!), for a hot chocolate or a Pumpkin Pie Spice mixture like this one here. All stuff you can make yourself at home if you have the basic spices in your cabinets. Most of the time that’s all you need. And instead of paying several euros or dollars per spice blend you “pay” only several cents when you use the spices you have at home. To be honest – all you pay is the packaging and marketing. And I don’t like that ;P
So – if you are like me, you make your own spice mixes at home. All you need is the right ratio of spices and that’s why I sometimes publish recipes like this one here. So you can save some money. If you have all the spices needed at home. If you have to buy most of them first (and will not use them on their own in other recipes), you might just go for the already made mix in the supermarket ;P
Anyway. I use this homemade Pumpkin Pie Spice quite a lot in fall. You will find it listed in several of my recipes here on the blog. You can use it for the “obvious” Pumpkin Spiced Latte, for cakes and cupcakes, waffles, and even for tiramisu. 2 TL Ingwer, gemahlen
2 TL Muskatnuss, gemahlen
1 1/2 TL Piment (Nelkenpfeffer), gemahlen
1 1/2 TL Nelken, gemahlen

Ingredients
3 tbsp. ground cinnamon
2 tsp. ground ginger

Instructions
1. Combine spices in a small bowl and mix well to combine. That’s all. Store in a small airtight container.
