Today’s recipe does not require an oven. It is time for some delicious Green Sandwiches! Easy to make and good for lunch, a light dinner or to take on a trip – well to be precise – they can be eaten all day and everywhere :P Why green? Well – St. Patrick’s Day was just a week ago and I thought green as a basic color could be nice :P
No cake or cupcakes today. I have something savory for a change. And something quick prepared as well. I know – my recipes can be a bit time-consuming sometimes, but this one here is made in no time :)
Do you have a favorite sandwich? There are so many delicious combinations out there – many with cold cuts or meat, but this one here is a veggie sandwich. If you go easy on the mayo, it is even healthy I would say ;) Salad, Avocado, sprouts – all packed with vitamins. If you use a “good” bread instead of a plain white one – even better!
The pickled onions used in the recipe can be made in a bigger batch and stored in the fridge for some days – they go well with a lot of sandwiches. The green mayo can be done with your favorite herbs or herbs that are in season, you don’t have to stick with the recipe. Right now you can get for example wild garlic everywhere – that should work well, just give it a try. If you are in a really big hurry, use pesto ;))

INGREDIENTS / ZUTATEN
(4 sandwiches)
For the pickled red onions:
1 red onion, thinly sliced
1/3 cup (80ml) white wine vinegar
2 tsp. sugar
1/2 tsp. salt
some peppercorns, lightly crushed
For the green Mayo:
1/2 cup basil leaves
1/2 cup chives, chopped
2 garlic cloves
1/4 tsp. salt
1 tsp. lemon juice
1/2 cup (120g) mayonnaise
salt, pepper
For the sandwiches:
8 slices bread
1 avocado, sliced
7 oz. fresh mozzarella, sliced
1/4 cucumber, sliced
green salad
green sprouts (e.g. cress or broccoli sprouts)
(4 Sandwiches)
Für die eingelegten Zwiebeln:
1 rote Zwiebel, in feine Scheiben geschnitten
80ml Weissweinessig
2 TL Zucker
1/2 TL Salz
Pfefferkörner, leicht zerdrückt
Für die Grüne Mayonnaise:
1 kl. Bund Basilikum
1 kl. Bund Schnittlauch
2 Knoblauchzehen
1/4 TL Salz
1 TL Zitronensaft
120g Mayonnaise
Salz, Pfeffer
Für die Sandwiches:
8 Brotscheiben
1 Avocado, in Scheiben geschnitten
200g frischer Mozzarella, in Scheiben geschnitten
1/4 Gurke, in Scheiben geschnitten
Grüner Salat
Grüne Sprossen (z.B. Kresse oder Brokkoli)
DIRECTIONS / ZUBEREITUNG
1. Start with the pickled onions by peeling and slicing the onion very finely. Add to a small glass or bowl and add the vinegar, sugar, salt and the crushed pepper corns. Let sit for 10-15 minutes and stir from time to time.
2. For the green mayonnaise, add the basil leaves, the chives, garlic, salt, lemon juice and mayonnaise to a food processor and mix until you get a smooth purée. Season with pepper (and more salt if needed) and set aside in the fridge.
3. Slice the bread and toast (optional), spread the green mayo on all the bread slices. Place the avocado slices on 4 of the bread slices, add some salad leaves on top and some of the cucumber. Add some salad leaves on the other 4 slices of bread and top with slices of mozzarella, some of the pickled onions and sprouts. Combine the different topped bread slices and press together. Wrap in sandwich paper and secure with two strings or toothpicks and cut in half with a sharp knife.
1. Mit den eingelegten Zwiebeln anfangen – dazu die Zwiebel schälen und in sehr feine Scheiben schneiden. In eine kleine Schüssel oder Glas legen, den Essig, Zucker, Salz und die zerdrückten Pfefferkörner dazugeben und für 10-15 Minuten ziehen lassen – dabei gelegentlich umrühren.
2. Für die grüne Mayonnaise die Basilikumblätter, den Schnittlauch, Knoblauch, Salz, Zitronensaft und die Mayo in einen Mixer geben und zu einer glatten Masse mixen – mit Pfeffer (und ggf. noch etwas Salz) abschmecken und bis zum weiteren Gebrauch in den Kühlschrank stellen.
3. Das Brot in Scheiben schneiden und toasten (optional). Die grüne Mayo darauf verteilen. Auf vier der Brotscheiben die geschnittene Avocado verteilen, etwas Salat und Gurkenscheiben obendrauf. Auf die vier anderen Brotscheiben erst etwas Salat legen, dann Mozzarella Scheiben, die eingelegten Zwiebeln und ein paar Sprossen. Die unterschiedlich belegten Brotscheiben mit dem passenden Gegenüber zu einem Sandwich kombinieren und zusammendrücken. Mit Butterbrotpapier einwickeln und dann mit zwei Schnüren oder Zahnstochern befestigen und in der Mitte mit einem scharfen Messer durchschneiden.
