There is nothing sweet on here today. Sorry! No cake nor cupcake. I wanted to make something savory for a change. Something I could eat right after taking pictures of it ;) This grilled cheese sandwich with bacon and homemade guacamole did not survive – it was gone on a split second after the last picture was taken. So good! ;)
I have several grilled cheese recipes up on the blog already and I might have mentioned this before – I really love grilled cheese sandwiches! Not only because they are delicious… who can resist melted cheese? Nobody! Besides that, they are really easy and quick to prepare. Give them 2-3 minutes from each side in your pan and then they are done and you can enjoy your quick lunch or dinner! The only thing that is a bit annoying – if you want to make more than one at the same time cause somebody is joining you for lunch or dinner, you got to work simultaneously with several pans. The moment you wish you had more than two arms :P
Anyway – this one here is an easy peasy delight. The only thing that adds some work is frying the bacon first. But that’s not a big deal. Make one or two strips more for munching as a snack and fry the sandwich in the bacon fat and all is fine ;)
The guacamole is homemade btw. – the Holy Guacamole recipe can also be found here on the blog. You can use store-bought guac but homemade is always fresher and better. No pressure! ;)
INGREDIENTS / ZUTATEN
2-3 slices bacon
2 slices bread (e.g. sour dough)
1-2 tbsp. soft butter
1/2 cup (50g) cheddar cheese, shredded
2 tbsp. guacamole
some crushed tortilla chips
2-3 Scheiben Bacon
2 Scheiben Brot (z.B. Sauerteigbrot)
1-2 EL weiche Butter
50g Cheddar, gerieben
2 EL Guacamole
ein paar zerbröselte Tortilla Chips
DIRECTIONS / ZUBEREITUNG
2. Butter the bread and place one slice of bread with the buttered side facing down in a hot (griddle) pan. Add half of the cheddar on top, the fried bacon, guacamole, crushed tortilla chips and top with the rest of the cheese. Place the second slice of bread (buttered side up) on top and fry over medium heat for about 2-3 minutes, until the bread is golden brown. Turn around and fry from the other side until the cheese has melted. Take out of the pan, cut in half and serve warm with some chips or fries.
2. Die Brotscheiben auf je einer Seite buttern und dann eine Brotscheibe mit der gebutterten Seite nach unten in eine heiße Pfanne legen. Die Hälfte des Cheddars darauf verteilen, den Bacon darauflegen, Guacamole und zerbröselte Tortilla Chips drauf und dann den restlichen Cheddar darüber streuen. Die zweite Brotscheibe mit der Butterseite nach oben auflegen und für 2-3 Minuten abraten. Das Brot sollte eine schöne goldbraune Farbe bekommen. Das Sandwich umdrehen und dann so lange anbraten, bis auch diese Brotseite eine schöne Farbe hat und der Käse geschmolzen ist. Aus der Pfanne nehmen, halbieren und mit Chips oder Pommes servieren.

Ingredients
- 2–3 slices bacon
