What’s your opinion about muffins? Do you like them? I really love them. They are normally really easy to prepare and very handy if you want to have a snack on the go. The opposite to the “fancier siblings” called cupcakes ;P Those fellas normally have a buttercream topping that makes them quite difficult to transport. They have to be carried carefully so the buttercream is not ending up all over the place and higher temperatures are also not a good idea if you got something with buttercream on top. So “yay” for muffins like these delicious Apple Cider Muffins! They might look pretty “basic” but don’t judge a book by it’s cover, right?! ;)
I am not trying to discredit cupcakes – I love them just as much as I love muffins. However, you have to admit that muffins are a lot more handy when it comes to transportation. And equally delicious! Some say muffins are kind of lame but these here are definitely anything but boring. They might look a bit plain – I have to admit that – but what really counts here is the texture and especially the flavors! Perfect little sweet treats! Really ;)
Apple Cider Muffins are one of many variations on the classic Apple Cider Donuts. A lot of apple flavors compressed in a small space. In addition to that very fluffy and quite juicy – a combination that is rare to find ;)
I lived in the US for some time – Florida to be more precisely. Back then I really fell in love with everything “apple cider”. You probably know that Americans like to go to the extrem whenever they like something. Similar to pumpkin spiced stuff you will find a lot of apple cider spiced goods when the “apple cider season” (this means fall) starts. Everything from scented candles to apple cider flavored sweets and desserts. I know it’s a bit much sometimes but I really love it. The combination of apple and cinnamon is just perfect ;)
Anyway. These muffins here are not only great in fall – I actually love them all year round. The flavor combination gets me all the time… but I guess most of you will prefer these fellas here when it’s colder outside – in fall and winter. So now is actually the perfect time. I heard even Florida has pretty low temperatures this January ;)
INGREDIENTS / ZUTATEN
For the batter:
5 oz. (140g) butter, at room temperature
3/4 cup (150g) brown sugar
2 large eggs
1 tsp. vanilla extract
1 3/4 cups (230g) all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cardamom
1/2 cup (120ml) hard apple cider*
1/4 cup (60ml) apple juice (cloudy)
For the coating:
3.2 oz. (90g) butter, melted
1/2 cup (100g) sugar
1 1/2 tsp. ground cinnamon

140g weiche Butter
150g brauner Zucker
2 Eier (L)
1 TL Vanille Extrakt
230g Mehl (Type 550)
1 1/2 TL Backpulver
1/4 TL Salz
1 TL gemahlener Zimt
1/2 TL gemahlene Muskatnuss
1/2 TL gemahlener Kardamom
120ml Apple Cider*
60ml Apfelsaft (naturtrüb)
Für die Ummantelung:
90g Butter, geschmolzen
100g Zucker
1 1/2 TL gemahlener Zimt
DIRECTIONS / ZUBEREITUNG
2. Add the butter and brown sugar to the bowl of a stand mixer and mix on high speed for about 3-4 minutes until very light and fluffy. Add the eggs one after another and mix well after each addition. Add the vanilla extract and mix in. Mix the flour, baking powder, salt, cinnamon, nutmeg, and cardamom, then add together with the apple cider and apple juice to the bowl and mix until just combined. Use a cookie scoop* and fill each mold about 3/4 full. Bake for about 16-19 minutes or until a toothpick inserted into the center of a muffin comes out clean. Take out of the oven and let cool down for about 5 minutes in the tin, then remove the muffins and place on a wire rack.
3. Melt the butter for the coating. Mix the sugar with the ground cinnamon in a small bowl. Brush the still warm muffins with the melted butter and roll them in the cinnamon-sugar mix until coated evenly. Let cool down on the wire rack.
2. Butter und braunen Zucker in die Schüssel einer Küchenmaschine geben und etwa 3-4 Minuten lang auf höchster Stufe aufschlagen, bis alles ehr hell und luftig aussieht. Die Eier nacheinander dazugeben und jeweils gut unterrühren. Den Vanille Extrakt dazugeben und unterrühren. Mehl, Backpulver, Salz, Zimt, Muskatnuss und Kardamom mischen und zusammen mit dem Cider und Apfelsaft in die Schüssel geben und nur kurz verrühren. Mit einem Cookie Scoop* (Eisportionierer) die Vertiefungen in der Muffinform zu etwa zu 3/4 füllen und die Muffins für etwa 16-19 Minuten backen. Mit einem Zahnstocher testen ob noch Teig kleben bleibt und die Muffins erst herausholen, wenn dieser sauber herauskommt. Muffins aus dem Ofen nehmen und etwa 5 Minuten in der Form abkühlen lassen, dann vorsichtig herauslösen und auf ein Kuchengitter setzen.
3. Die Butter für die Ummantelung schmelzen. Zucker und Zimt in einer kleinen Schüssel vermischen. Die noch warmen Muffins mit der geschmolzenen Butter bepinseln und dann in der Zimt-Zucker-Mischung wälzen, bis sie vollständig bedeckt sind. Erneut auf das Kuchengitter setzen und abkühlen lassen.
