You have cookies, chocolate, and candy at home you don’t know what to do with? I know that question makes no sense – of course, you know what to do with it – you eat it! ;) But there is another way to “get rid” of half-eaten packages of cookies and stuff… make Compost Cookie Bars!

You can basically use all kind of cookies and sweets you can find (and like) – that’s why they are called “Compost” Cookie Bars. Recycle and mix what you can find in your cabinets and make something delicious and new. Most of the time there is no need to go to the groceries store – at least in my case. For the ones you can see on the pictures, I used Oreo Cookies, Vanilla Cookies, and m&m’s – you could also use Chocolate Chip Cookies, Graham Crackers, Chocolate Bars, Chocolate Covered Pretzels… lots of possibilities. Get crazy and creative :)
INGREDIENTS / ZUTATEN
1/2 cup (120g) butter, melted
1 large egg
1 cup (200g) brown sugar, packed
1 tbsp. vanilla extract
2 tbsp. sour cream
1 cup (130g) all-purpose flour
2 cups cookies, coarsely chopped (use any cookies you have at home – for example, Oreo Cookies, Vanilla Cookies, Chocolate Chip Cookies, Chocolate Covered Pretzels…)
1/2 cup m&m’s
120g geschmolzene Butter
1 Ei (L)
200 brauner Zucker
1 EL Vanille Extrakt
2 EL Sour Cream (Schmand)
130g Mehl (Type 405)
2 cups (Tassen) Kekse, grob gehackt ( man kann im Grunde alles verwenden, was man zu Hause finden kann – zB. Oreo Cookies, Vanille Kekse, Schokoladenkekse, Schokoladenüberzogene Brezeln… )
1/2 cup (Tasse) m&m’s


DIRECTIONS / ANLEITUNG
2. In a large bowl combine brown sugar and melted butter and mix until light and fluffy. Add the egg, vanilla, and sour cream and mix until well combined. Add the flour and mix until just combined – do not overmix. Stir in chopped cookies.
3. Fill batter into prepared baking pan, smooth out the surface and sprinkle with m&m’s. Press lightly into the batter. Bake for 20-22 minutes. The top should be set and edges slightly firm. A toothpick inserted should come out clean.
4. Allow cooling for at least 20 minutes before removing from the pan and slicing.
2. In einer großen Schüssel den braunen Zucker und die geschmolzene Butter aufschlagen, bis alles hell und leicht ist. Ei, Vanille Extrakt und Sour Cream (Schmand) zugeben und alles gut verrühren. Mehl zugeben und unterrühren – nicht zu viel rühren. Gehackte Kekse unterheben.
3. Teig in die Form füllen und Oberfläche glattstreichen. Mit den M&M’s bestreuen und leicht in den Teig drücken. Für 20-22 Minuten backen. Mit einem Zahnstocher testen, ob noch Teig kleben bleibt und erst herausnehmen, wenn der Zahnstocher sauber herauskommt.
4. Vor dem Herausnehmen aus der Form und dem Schneiden mindestens 20 Minuten auskühlen lassen.
