Ingredients

  • 1/2 cup (120g) unsalted butter, melted
  • 1 large egg
  • 1 cup (220g) light brown sugar, packed
  • 1 tbsp. vanilla extract
  • 2 tbsp. sour cream
  • 1 cup (130g) all-purpose flour
  • 2 cups cookies, coarsely chopped (use any cookies you have at home – for example Oreo Cookies, Vanilla Cookies, Chocolate Chip Cookies, Chocolate Covered Pretzels…)
  • 1/2 cup M&M’s

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch (20x20cm) baking pan with baking parchment and set aside.
  2. In a large bowl combine brown sugar and melted butter and mix until light and fluffy. Add the egg, vanilla and sour cream and mix until well combined. Add the flour and mix until just combined – don’t overmix. Stir in chopped cookies.
  3. Fill batter into prepared baking pan, smooth out the surface and sprinkle with m&m’s. Press lightly into the batter. Bake for 20-22 minutes. Top should be set and edges slightly firm. A toothpick inserted should come out clean.
  4. Allow to cool for at least 20 minutes before removing from pan and slicing.
