Browned Butter Banana Bread with Peanut Streusel

Everything is better with nut butter :) You don’t know what this is? Gonna tell you in a minute – first a picture of a delicious banana bread :P

So what is nut butter? Butter with nuts? No ;) In France it is called “beurre noisette”. Well, it is easy – it is browned butter ;) Add good quality butter to a saucepan, melt and let simmer until the milk sugar starts to caramelize – the nut butter is done when you can see small brown spots on the bottom of the pan and the butter starts to smell like nuts. The cooled nut butter can be stored for weeks in the fridge. Chefs use them as a sauce for various dishes, when baking you can use it to give your bakes some more flavor :)

I like to use it a lot when baking – for example with these delicious Carrot Cake Cupcakes or in this Rhubarb Tart – the nutty flavor complements many bakes – you should definitely try! Same for this banana bread with peanut streusel – excellent combination :)

INGREDIENTS / ZUTATEN

For the streusel:
1/4 cup (55g) butter
1/2 cup (100g) brown sugar
1/2 cup (60g) all-purpose flour
1/4 tsp. salt
2/3 cup (100g) roasted and salted peanuts, chopped

For the cake:
1/2 cup (115g) butter
1 3/4 cups (230g) all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 ripe bananas
1/3 cup (70g) brown sugar
1/3 cup (70g) sugar
1/2 cup (100g) Greek yogurt or skyr
2 tbsp. orange juice
1 tbsp. vanilla extract
2 eggs

Für die Streusel:
55g Butter
100g brauner Zucker
60g Mehl (Type 405)
1/4 TL Salz
100g gesalzene und geröstete Erdnüsse, grob gehackt

Für den Kuchen:
115g Butter
230g Mehl (Type 405)
1 TL Backpulver
1 TL Natron
1/2 TL Salz
2 reife Bananen
70g brauner Zucker
70g Zucker
100g Griechischer Joghurt oder Skyr
2 EL Orangensaft
1 EL Vanille Extrakt
2 Eier

DIRECTIONS / ZUBEREITUNG

1. Preheat the oven to 350˚F (175°C). Grease a 9×5 inch (23x13cm) loaf tin or line with baking parchment and set aside.

2. Start with the streusel by melting the butter and chopping the peanuts. Set aside. In a bowl mix flour, brown sugar and salt until well combined. Add the melted butter and mix with a fork. Add the chopped peanuts and mix until streusel form (add some more flour if the mixture is too wet) – set aside.

3. Add the butter for the cake batter into a small saucepan and melt over medium-high heat. The butter will start to foam up and sizzle (be careful) – move the saucepan a bit and continue cooking until you can see brown dots on the bottom of the pan and the butter starts smelling a bit “nutty”. Remove from the heat and let cool down.

4. In a large bowl mix the flour with baking powder, baking soda, and salt. Set aside. In a medium-size bowl mash the ripe bananas with a fork. Add the sugars, yogurt or skyr, orange juice, and vanilla extract and mix. Add the cooled browned butter and mix until well combined. Add the eggs and mix well. Now add the wet ingredients to the bowl with the flour mixture and mix until just combined. Transfer the dough into the prepared loaf tin and sprinkle with the streusel – press the streusel a bit into the dough. Bake in the middle of the oven for 35-40 minutes or until a wooden skewer inserted in center comes out clean. Take out of the oven and let cool down completely before serving.

1. Den Ofen auf 180°C (350°F) vorheizen. Eine Kastenform mit ca 23x13cm (9×5 inch) einfetten oder mit Backpapier auslegen.

2. Mit den Streuseln anfangen und dafür die Butter schmelzen und die Erdnüsse grob hacken. Beides zur Seite stellen. In einer Schüssel das Mehl mit dem braunen Zucker und Salz vermischen. Geschmolzene Butter zugeben und mit einer Gabel verrühren. Die gehackten Nüsse zugeben und alles zu Streuseln verarbeiten (sollte die Masse zu feucht sein, noch etwas Mehl zugeben). Zur Seite stellen.

3. Die Butter für den Teig in einen kleinen Topf geben und bei mittlerer Hitze schmelzen lassen. Die Butter weiterhin erhitzen, bis sie aufschäumt und zu köcheln beginnt (vorsicht spritzt etwas). So lange köcheln lassen, bis sich am Boden des Topfes kleine dunkle stellen bilden – die Butter “bräunt” und fängt an etwas nussig zu riechen. Vom Herd nehmen und abkühlen lassen.

4. In einer großen Schüssel das Mehl mit Backpulver, Natron und Salz vermischen. Zur Seite stellen. In einer zweiten kleineren Schüssel die reifen Bananen mit einer Gabel zerdrücken. Die beiden Zucker, den Joghurt oder Skyr, Orangensaft und Vanille Extrakt zugeben und verrühren. Die abgekühlte, gebräunte Butter zugeben und alles gut verrühren. Eier zugeben und verrühren. Diese “feuchten” Zutaten jetzt in die Schüssel mit dem Mehl geben und nur sehr kurz verrühren. Den Teig in die Form füllen und die Streusel darauf verteilen – ein paar der Streusel dabei etwas in den Teig drücken. In die Mitte des Ofens stellen und für 35-40 Minuten backen – mit einem Zahnstocher testen, ob noch Teig kleben bleibt und erst herausnehmen, wenn der Zahnstocher sauber herauskommt. Aus dem Ofen nehmen und komplett abkühlen lassen.
