Browned Butter Banana Bread with Peanut Streusel

For the streusel

  • 1/4 cup (55g) butter
  • 1/2 cup (100g) brown sugar
  • 1/2 cup (60g) all-purpose flour
  • 1/4 tsp. salt
  • 2/3 cup (100g) roasted and salted peanuts, chopped

For the cake

  • 1/2 cup (115g) butter
  • 1 3/4 cups (230g) all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 ripe bananas
  • 1/3 cup (70g) brown sugar
  • 1/3 cup (70g) sugar
  • 1/2 cup (100g) greek yoghurt or skyr
  • 2 tbsp. orange juice
  • 1 tbsp. vanilla extract
  • 2 eggs

Instructions

  1. Preheat the oven to 350˚F (175°C). Grease a 9×5 inch (23x13cm) loaf tin or line with baking parchment and set aside.
  2. Start with the streusel by melting the butter and chopping the peanuts. Set aside. In a bowl mix flour, brown sugar and salt until well combined. Add the melted butter and mix with a fork. Add the chopped peanuts and mix until streusel form (add some more flour if the mixture is too wet) – set aside.
  3. Add the butter for the cake batter into a small saucepan and melt over medium-high heat. The butter will start to foam up and sizzle (be careful) – move the saucepan a bit and continue cooking until you can see brown dots on the bottom of the pan and the butter starts smelling a bit “nutty”. Remove from the heat and let cool down.
  4. In a large bowl mix the flour with baking powder, baking soda and salt. Set aside. In a medium size bowl mash the ripe bananas with a fork. Add the sugars, yoghurt or skyr, orange juice and vanilla extract and mix. Add the cooled browned butter and mix until well combined. Add the eggs and mix well. Now add the wet ingredients to the bowl with the flour mixture and mix until just combined. Transfer the dough into the prepared loaf tin and sprinkle with the streusel – press the streusel a bit into the dough. Bake in the middle of the oven for 35-40 minutes or until a wooden skewer inserted in center comes out clean. Take out of the oven and let cool down completely before serving.
