For the past several years already, January turns into #Veganuary in many places all over the world. That’s the reason why you will find some more vegan recipes than usual here on this blog this month. Together with Andrea from Zimtkeks & Apfeltarte I am doing again the “Vegan Bake Together” this week. Every day of the week you’ll find a new vegan recipe here on the blog and over at Andrea’s blog. We are starting the week with something for breakfast – in my case some delicious Vegan Apple Pie Oatmeal with Granola. A great dish to start your day ;)
Andrea and I are doing our little “Bake Together – The Baking Surprise” for many, many, many (really many) years already. One topic, several hours in the kitchen to come up with something and a big (baked) surprise for each of us at the end – that would be a short description of what we are doing once a month ;) If you want the extended version you can check the first “Bake Together” recipe from 2016.
Anyway. For 4 years now we are also doing a vegan week in January with different recipes throughout the week. Everything from breakfast, snacks, and main dishes to desserts and cakes. With all the recipes we publish during the vegan week, you could theoretically plan a whole day of cooking and baking, and you’d be nicely full at the end. But you should probably have a larger family at home because all of that food would be a bit much for 1-2 people only ;P
Anyway. Today is all about breakfast. The most important meal of the day, many say. That’s not necessarily my opinion. I prefer a nice dinner over breakfast to be the important meal of the day. That does not mean I want you to start the day with only a coffee and a dry cookie or something like that ;) Something like this delicious vegan oatmeal here is definitely a nice (and healthy) option to start your day. You can prepare most of it ahead of time which saves some time in the morning – no need to spend more time than necessary in the kitchen when you’re probably still sleepy ;P
Starting the day with some vegan breakfast is really not complicated (or time-consuming). If you are not the “hearty” breakfast type that needs sausages and eggs sunny side up for breakfast you have actually quite a lot of vegan options to choose from. Oatmeal or overnight oats (there you can find a recipe for homemade granola) are something simple you could do. If you got a bit more time and want something hearty I can recommend Breakfast Bowls with Vegan Scrambled Eggs – also not too complicated. However, you need some ingredients that many don’t have at home on a regular basis. Most of you probably have rolled oats at home – so that is definitely a bit easier to do… ;)

The next recipe for the “Vegan Bake Together” week will be something to snack on. Can’t tell you if it’s sweet or savory. Not yet. I guess you have to come back to find out ;P
INGREDIENTS / ZUTATEN
(2 servings)
For the apple compote:
2 apples (e.g. Granny Smith), peeled & cubed
2 tbsp. muscovado sugar
1/8 tsp. ground cinnamon
2 tbsp. water
1 tsp. lemon juice
For the oatmeal:
1 1/4 cup (300ml) oat milk
1 tbsp. maple syrup
1/2 tsp. ground cinnamon
1 pinch of ground cardamom
3.5 oz. (100g) rolled oats/oatmeal oats (spelt)
vegan granola, nuts, and/or raisins as a topping
some muscovado sugar for sprinkling
(2 Portionen)
Für das Apfelkompott:
2 Äpfel (z.B. Granny Smith), geschält & gewürfelt
2 EL Mascobado Zucker
1/8 TL Zimt
2 EL Wasser
1 TL Zitronensaft
Für den Porridge:
300ml Haferdrink
1 EL Ahornsirup
1/2 TL Zimt
1 Prise Kardamom
100g Porridge Dinkelflocken
veganes Granola, Nüsse und/oder Rosinen als Topping
etwas Mascobado Zucker zum Bestreuen
DIRECTIONS / ZUBEREITUNG
1. Peel and core the apples, then cut them into small cubes. Add together with the sugar, cinnamon, water, and lemon juice to a small saucepan and heat up over medium-low heat. Cook the apples until the liquid has almost disappeared and the apples are soft – about 5-6 minutes. Remove from the heat.
2. While the apples are cooking you can also prepare the oatmeal. Add the oat milk, maple syrup, cinnamon, and cardamom to a small pot and mix to combine. Heat up until you can see some bubbles forming on the surface, then add the oats and mix well. Let on the heat for a moment, then remove and let soak for about 4-5 minutes. Mix occasionally.
3. Either divide the oatmeal and apples between two bowls or add both to one large bowl and share. Sprinkle with some vegan granola, nuts, raisins, or any favorite topping. Sprinkle with some sugar and serve still warm or cooled. Leftovers can be stored in an airtight container in the fridge.
1. Die Äpfel schälen und entkernen, dann in kleine Würfel schneiden. Zusammen mit Zucker, Zimt, Wasser und Zitronensaft in einen kleinen Topf geben und bei mittlerer Hitzezufuhr aufkochen. Die Äpfel dann so lange köcheln lassen, bis die Flüssigkeit fast komplett verkocht ist und die Äpfel weich sind – dauert etwa 5-6 Minuten. Vom Herd ziehen und zur Seite stellen.
2. Während die Äpfel köcheln, kann man auch schon den Porridge vorbereiten. Dazu einfach Haferdrink, Ahornsirup, Zimt und Kardamom in einen kleinen Topf geben und verrühren. Solange auf dem Herd erhitzen, bis man kleine Bläschen aufsteigen sieht, dann die Dinkelflocken dazugeben und unterrühren. Die Mischung kurz auf dem Herd stehen lassen, dann herunterziehen und etwa 4-5 Minuten quellen lassen. Gelegentlich umrühren.
3. Porridge und Äpfel entweder auf zwei Schüsseln aufteilen oder beides in einer großen Schüssel/Teller servieren. Mit veganem Granola, Nüssen, Rosinen oder einem anderen Topping nach Belieben dekorieren. Mit etwas Zucker bestreuen und noch warm oder auch abgekühlt servieren. Reste können in einem luftdichten Behälter im Kühlschrank aufbewahrt werden.
