It is Cookie Friday! Well and also “Bake Together”. This probably means these Vegan Spelt Flakes Cookies are twice as good, right?! Well… they are definitely delicious and if we ignore the sugar that is in those cookies we could say they are also healthy…. at least a bit ;)
If you have been here on this blog before, the chances are good you have seen some of my “Bake Together – The Baking Surprise” recipes already. Together with Andrea from Zimtkeks & Apfeltarte I am doing a little baking event for several years now where we decide on a topic and publish a recipe every last Sunday of the month. We bake “together” far away from each other *LOL* and surprise each other with the results. None of us knows what the other one is making and sometimes we come up with similar ideas – most of the time it is completely different.
Anyway. This week is different. We decided to make vegan recipes only and chose a type of dish for each weekday – on Monday something for breakfast, Tuesday is snacking time, Wednesday is… well you get the concept ;) Besides that – no more rules and everything is possible. So I guess we will end up with very different recipes each day since there are soooo many delicious vegan dishes out there you can do…
Today’s cookies are a good source of fiber. Spelt flakes (same for oats) are good for your digestive system and do not affect blood sugar levels much. The cookies get their sweetness mostly from the apple sauce added – it also serves as the binding agent in the dough instead of a regular egg and keeps everything together. If you want to skip animal products you can replace eggs with apple sauce, banana or chia pudding (soaked chia seeds). It works in most recipes – you just have to keep in mind that these replacements have certain flavors that have to work in combination with the original recipe. Not everyone likes the taste of banana in their bakes ;)
If you want to add some dried fruits or nuts to the mix feel free to do so. Raisins, dried cranberries or chopped hazelnuts are a nice addition here. Just don’t overdo it. A handful of fruits/nuts should be enough here. If you add too much it might affect the texture of the cookies at the end.

INGREDIENTS / ZUTATEN
1/3 cup (75g) margarine
3.5 oz. (100g) spelt flakes
2.6 oz. (75g) ground hazelnuts
4 tbsp. brown sugar
1 tsp. ground cinnamon
2.8 oz. (80g) apple sauce
1.8 oz. (50g) spelt flour
75g Margarine
100g Dinkelflocken
75 gemahlene Haselnüsse
4 EL brauner Zucker
1 TL Zimt
80g Apfelmus
50g Dinkelmehl (Type 630)
DIRECTIONS / ZUBEREITUNG
2. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside. Add the apple sauce with the remaining 3 tbsp. sugar to a large bowl and mix to combine. Add the flour and mix in until well combined. Add the cooled toasted mixture and fold in. Use a cookie scoop (or tablespoons) to place dough portions with a little space in between on the baking sheet. Flatten a bit and then bake for 11-12 minutes. The edges should get a bit of color while baking. Take out of the oven and let cool down on a wire rack.
2. Den Ofen auf 180°C (350°F) vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen. Das Apfelmus und die restlichen 3 EL Zucker in eine große Schüssel geben und verrühren. Mehl dazugeben und unterrühren. Die Haferflockenmischung dazugeben und alles gut verrühren. Mit einem Cookie Scoop (Eisportionierer) oder Esslöffeln Teigportionen mit etwas Abstand auf das Backblech setzen und leicht flachdrücken. Für 11-12 Minuten backen – die Ränder dürfen etwas Farbe bekommen. Aus dem Ofen holen und auf einem Kuchengitter abkühlen lassen.
