It’s #CookieFriday and I got a fresh batch of cookies. Oatmeal cookies are loved by our whole family. Even the dog loves his doggy cookies with oats. Somehow the texture of these cookies is always very nice. Soft and crunchy at the same time – and the flavors are great too, of course. You can combine the oats with many different ingredients. The most popular combination is probably the classic Oatmeal Raisin Cookie https://baketotheroots.de/oatmeal-raisin-cookies/, but you can use many other things: nuts, dried fruits, chocolate, maple syrup, tahini or honey. The possibilities are almost endless ;P
We have quite a good amount of honey at home right now. We adopted some bees a while ago and they sent us several glass jars of honey so far. Very productive bees I have to say. Well… even though honey almost never goes bad, we are doing a lot of recipes with honey right now – to get rid of some of the glass jars. Our kitchen is quite small and those jars take a lot of space ;)
If you like the flavor of honey, you probably like these cookies… so get the dough ready and bake yourself a delicious sweet little treat.
INGREDIENTS / ZUTATEN
1/2 cup (120g) butter
1/2 cup 100g) sugar
2 medium eggs
3.5 oz. (100g) honey
1 1/4 cup (160g) all-purpose flour
1 1/2 cups (100g) rolled oats
1 tsp. baking soda
1/2 tsp. salt
1.8 oz. (50g) shredded coconut flakes
3.5 oz. (100g) chocolate chips
120g Butter
100g Zucker
2 Eier (M)
100g Honig
160g Mehl (Type 550)
100g Haferflocken (Kleinblatt)
1 TL Natron
1/2 TL Salz
50g Kokosraspeln
100g Schokodrops (Zartbitter)
DIRECTIONS / ZUBEREITUNG
2. Add the butter and sugar to a large bowl and mix until light and fluffy. Add the eggs one after another and mix well after each addition. Add the honey and mix in. Mix the flour with the rolled oats, baking soda, and salt. Add to the bowl and mix until just combined. Add the shredded coconut flakes and chocolate chips and fold in. Use a cookie scoop and place dough portions with enough space in between on the prepared baking sheet (the cookies spread a lot) and bake for 10-12 minutes until the centers are set and the edges got some color. Take out of the oven and let cool down on the baking sheet for some time, then transfer to a wire rack and let cool down completely. Repeat with the remaining dough.
2. Butter und Zucker in eine große Schüssel geben und hell und luftig aufschlagen. Die Eier einzeln dazugeben und jeweils gut unterrühren. Honig dazugeben und unterrühren. Mehl mit Haferflocken, Natron und Salz vermischen, dann zur großen Schüssel dazugeben und nur kurz unterrühren. Die Kokosraspeln und Schokodrops unterheben. Mit einem Cookie Scoop (Eisportionierer) oder Esslöffeln Teigportionen mit genügend Abstand auf das Blech setzen (die Cookies laufen stark auseinander) und dann für 10-12 Minuten backen, bis die Mitte der Cookies fest ist und die Ränder Farbe bekommen haben. Aus dem Ofen holen und für einen Moment auf dem Blech abkühlen lassen, dann auf ein Kuchengitter setzen und komplett auskühlen lassen.
