In the past, food trends often started on good old food blogs (like this one here). Things have changed a bit. Food bloggers are still often the ones who start those food trends, but going viral is only happening on TikTok and other social media (video) platforms – including these Chocolate Chip Cookie Croissants (aka. Crookies). A huge mess when you make them and most definitely not healthy… but also really delicious. Unfortunately, you could say ;P
These »Frankenstein« croissants that are combined with cookie dough are the invention of real bakers, not food influencers ;P The Crookies debuted back in December 2023 at the Boulangerie Louvard in Paris (that’s the information I could find) and made their way to TikTok shortly after… and are now trending for several weeks already ;)
I really love watching TikTok and always get those viral videos served by the algorithm, of course. Who does not?! It’s all really interesting, but I am not often trying these viral recipes myself. Some are just too weird. However, this one here caught my attention. I mean… it’s something with cookie dough and I love cookies! ;P
Well… Croissants and cookies come together in this »Frankenstein pastry«. To be more precise – an already baked croissant and (homemade) cookie dough. You combine the two and they end up in the oven where they turn into a very sinful snack. The preparation is super easy. Definitely less time-consuming compared to Cruffins and Cronuts. Two other hyped hybrid bakes that have been around for several years now ;P
Let’s be hontest – the idea isn’t all that new here. Frangipane Croissants are basically the same thing. Ready-made croissants are filled and coated with a sweet mixture and then baked in the oven for some time. The result is an extremely tasty snack (same as here) with far more calories than the croissant alone would have had ;P
Anyway – a new addition to the already wide range of sweet snacks you will soon find in a bakery or coffee shop nearby. These Crookies work great with regular chocolate chip cookie dough, but can also be made with other cookie dough variations. I’ve mixed up a small amount of dough using one of my basic cookie recipes – if that’s too time-consuming for you, you can also use ready-made dough from the supermarket. Many (American) TikTokker use that for their videos. Works well and saves you at least 2 minutes of time compared to homemade dough (the time you need to buy the dough is not included) ;P
I only filled three croissants with the amount of dough from the recipe for the pictures. It’s a decent amount of cookie dough per croissant. You probably would not eat that much sweets at once if you ate them separately (one croissant and two large cookies), but hey… life is short! ;P You can definitely reduce the amount of cookie dough per croissant though. I would say you could easily make 4-5 croissants with the recipe instead of three and they would be just as good, sweet, and delicious.
If you want to try out more croissants or croissant adjacent recipes, you can find much more here on the blog. Maybe not viral recipes, but equally delicious. All a bit more time-consuming though. My Salted Caramel & Chocolate Brioche Croissants take a little time to prepare, as do my simple Vanilla Custard Croissants… but both are damn tasty! Unfortunately, not suitable for TikTok because you can’t make them in 5 minutes. Bummer ;P
INGREDIENTS / ZUTATEN
(3-4 croissants)
3-4 butter croissants
1 1/4 cups (160g) all-purpose flour
2.8 oz. (80g) brown sugar
1/2 tsp. baking powder
1 pinch of salt
2.8 oz. (80g) butter, melted
1 tsp. vanilla extract
1-2 tbsp. milk (or similar)
2.1 oz. (60g) semi-sweet chocolate, roughly chopped
some additional chopped chocolate (optional)
(3-4 Croissants)
3-4 Buttercroissants
160g Mehl (Type 405)
80g brauner Zucker
1/2 TL Backpulver
1 Prise Salz
80g Butter, geschmolzen
1 TL Vanille Extrakt
1-2 EL Milch (o.ä.)
60g Zartbitterschokolade, grob gehackt
etwas zusätzliche gehackte Schokolade (optional)
DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment. Slice the croissants horizontally in half and place them on the baking sheet. Set aside.
2. Add the butter to a microwave-safe bowl and melt in the microwave. Let cool slightly. In a large bowl mix the flour with brown sugar, baking powder, and salt. Add the melted butter and vanilla extract and mix to combine. If the dough is still too crumbly, add a little milk. Add the chopped chocolate and fold in.
3. Using a cookie scoop*, place two portions of dough on the bottom side of each croissant and spread it a little with a spatula. Close the croissants with the top and then pile more cookie dough on top of the croissants. This works best if you press some dough flat between your fingers and then place it on top of the croissants. If desired, press some chopped chocolate into the dough (optional).
4. Bake the croissants for 16-18 minutes – the cookie dough on top of the croissants should have gotten some color but not look dry. Remove from the oven and let cool down (min. 20 minutes). The chocolate chip cookie croissants taste best when they are still slightly warm.
Note: If you want the full load, only use three croissants. The cookie dough is enough for four croissants though.
1. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen. Die Croissants aufschneiden und auf das Blech setzen. Zur Seite stellen.
2. Die Butter in eine mikrowellengeeignete Schüssel geben und in der Mikrowelle schmelzen – leicht abkühlen lassen. Mehl, Zucker, Backpulver und Salz in einer großen Schüssel vermischen. Die geschmolzene Butter und den Vanille Extrakt zur Schüssel dazugeben und alles gut vermengen. Sollte der Teig noch zu bröselig sein, etwas Milch dazugeben. Die gehackte Schokolade dazugeben und unterheben.
3. Mit einem Eisportionierer* jeweils zwei Portionen Teig auf die untere Seite der Croissants setzen und mit einem Spatel o.ä. ein wenig verstreichen. Die Croissants mit der Oberseite schließen und dann noch mehr Cookie-Teig auf die Croissants aufschichten. Das funktioniert am besten, wenn man etwas Teig flach drückt und dann auf die Croissants auflegt. Nach Belieben noch etwas gehackte Schokolade in den Teig drücken.
4. Die Croissants für 16-18 Minuten backen – der Cookie-Teig auf den Croissants sollte etwas Farbe bekommen haben, aber nicht komplett trocken aussehen. Aus dem Ofen holen und abkühlen lassen (min. 20 Minuten). Die Chocolate Chip Cookie Croissants schmecken am besten, wenn sie noch leicht warm sind.
Hinweis: Wer die volle Ladung möchte, nimmt nur 3 Croissants – der Cookie-Teig reicht aber auch für 4 Croissants.
