It’s time for some delicious burgers. Not from the delivery service. Something homemade and super easy to prepare. Sounds good, right? By the way, there is no need to use meat for a good burger. These Halloumi Veggie Burgers are as delicious as their meaty friends… probably just a bit healthier because of the veggies used to make them ;P
I am a really big fan of burgers – no matter if they are made with meat or veggies. If the burger is well prepared I’m all in. I guess I caught that “burger virus” somewhere in the US when I was living there for some time ;) Toasted burger buns, some meat, chicken, or in this case here some fried halloumi slices, salad or veggies on top, some sauce… perfect meal for me. However, I must also say, even though there are many good burger joints out there – I think homemade burgers are still the best. Aren’t they? ;)
I already got some burger recipes here on the blog – including delicious Halloumi Burgers with Grilled Veggies – so in case, you want more… there are more options ;) Halloumi is really great to create some delicious burgers. Probably not the best option for meat lovers, but we really like that squeaky cheese here. Not only in burgers… but also great in salad, for example.
These halloumi burgers here are really easy to prepare. Salsa and feta cream can be prepared well in advance and stored in the fridge. When it’s time to feed the family (or friends) you just have to fry the mushrooms and the halloumi. That’s basically all you got to do. Not really much though.
We always fry our halloumi in a frying pan, but of course, you can also do that on a grill. If you are not that much into halloumi you can replace it with chicken or a regular beef patty. Or make everyone something different – the salsa and feta cream work also well with beef and chicken… just saying ;)
INGREDIENTS / ZUTATEN
For the salsa topping:
1 medium tomato, cubed
1 piece of cucumber (about 2 inches/5cm), cubed
1/2 small red onion, chopped
1 tbsp. lime juice
salt, pepper
For the whipped feta:
1.8 oz. (50g) feta cheese
2-3 dried tomatoes (the soft ones in oil)
1-2 tbsp. yogurt
1 tsp. lime juice
salt, pepper
chili flakes (optional)
For the burgers:
some olive oil for frying
3 large mushrooms, sliced
7 oz. (200g) halloumi cheese, thickly sliced
some smoked paprika
salt, pepper
2 brioche burger buns
2 lettuce leaves
Für die Salsa:
1 mittelgroße Tomate, gewürfelt
1 kl. Stück Gurke (ca. 5 cm), gewürfelt
1/2 kleine rote Zwiebel, gewürfelt
1 EL Limettensaft
Salz, Pfeffer
Für den Whipped Feta:
50g Feta (oder Hirtenkäse)
2-3 getrocknete Tomaten (in Öl eingelegt)
1-2 EL Joghurt
1 TL Limettensaft
Salz, Pfeffer
Chiliflocken (optional)
Für die Burger:
etwas Olivenöl zum Anbraten
3 große Champignons, in Scheiben geschnitten
200g Halloumi Käse, in dicke Scheiben geschnitten
etwas geräucherter Paprika
Salz, Pfeffer
2 Brioche Burgerbrötchen
2 Salatblätter
DIRECTIONS / ZUBEREITUNG
2. For the whipped feta add the feta, the dried tomatoes, and one tablespoon of yogurt to a bowl and mix with an immersion blender until you get a smooth paste. The consistency should be thick, similar to hummus. If you think it’s too compact, add some more yogurt. Add the lime juice and mix in. Season with salt, pepper, and some chili flakes for some heat (optional). Place in the fridge until needed.
3. Add some oil to a frying pan and heat up. Add the sliced mushrooms, season them with a bit of salt and fry from both sides until nicely browned – takes about 4-6 minutes. Remove from the pan.
4. Use the same pan for the halloumi. Add some more oil if necessary. Season the halloumi slices with smoked paprika, salt, and pepper, and fry from both sides until nicely browned – takes only a few minutes. Take out of the pan and set aside on a plate. Toast the brioche buns in the same pan.
5. To assemble the burgers place the bottom brioche buns on plates, add the fried mushrooms on top, then spread the whipped feta on top, place a lettuce leaf on top, then some salsa topping, the fried halloumi, and more of the salsa topping. Add the top of the brioche bun and serve immediately – with some fries or potato chips.
2. Für den Whipped Feta den Feta, die getrockneten Tomaten und einen Esslöffel vom Joghurt in eine Schüssel geben und mit einem Stabmixer pürieren, bis eine glatte Masse entsteht. Die Konsistenz sollte recht kompakt sein, ähnlich wie bei Hummus. Falls das Ganze doch noch etwas zu fest wirkt, einfach etwas mehr Joghurt dazugeben. Limettensaft unterrühren und mit Salz, Pfeffer und einigen Chiliflocken (optional) abschmecken. Bis zur weiteren Verwendung in den Kühlschrank stellen.
3. Etwas Öl in eine Pfanne geben und erhitzen. Die in Scheiben geschnittenen Pilze hinzugeben, mit etwas Salz würzen und von beiden Seiten kross anbraten – das dauert etwa 4-6 Minuten. Aus der Pfanne nehmen und zur Seite stellen.
4. Für den Halloumi kann man dieselbe Pfanne verwenden, bei Bedarf noch etwas Öl dazugeben. Den dick geschnittenen Halloumi mit Rauchpaprika, Salz und Pfeffer würzen und dann von beiden Seiten kross anbraten – dauert nur ein paar Minuten. Aus der Pfanne nehmen und zur Seite stellen. In der noch heißen Pfanne die Brioche Brötchen kurz anrösten/erwärmen.
5. Für den Zusammenbau der Burger die unteren Brötchenhälften auf zwei Teller legen, die gebratenen Pilze darauf verteilen, dann mit der Feta Creme bestreichen, ein Salatblatt darauf legen, dann etwas Salsa, den gebratenen Halloumi und noch einmal Salsa. Das Oberteil des Burgerbrötchens auflegen und sofort servieren – z.B. mit Pommes oder Kartoffelchips.

1. For the salsa topping wash and dry the tomato. Cut in half and remove the watery insides. Cut the tomato flesh into small cubes. Cut the piece of cucumber into equally small cubes. Peel the onion and chop half of it finely – wrap the other half and use it for something else. Add everything to a bowl and mix to combine. Add the lime juice and season with salt and pepper. Mix again. Place in the fridge until needed.
