For today’s Cookie Friday I got some cookies for you with eggnog – or better said the German version of it: Eierlikör! I guess not everybody’s darling, but I like it a lot! Around Easter definitely, something you can find in our house everywhere and all the time. If you try one of these Eggnog (Eierlikör) Snickerdoodles you will agree – they are the best! ;)

I know that eggnog does not have the best image. Some probably might say it’s gross and yucky. I love it. End of story :P I am actually not drinking it often, but it is really great for baking! There are so many things you can make with eggnog or Eierlikör. Not only boring things!
I think Eierlikör/eggnog makes many bakes better. You hardly get the full eggnog flavor when you use it in a dough, there is normally just a hint of it in the baked goods. If you combine it with cinnamon, it gets even better. Guess what?! This is what you get with these Snickerdoodle cookies ;)

If you want to make “ordinary” Snickerdoodles – no problem – I also have a recipe for that! What about Snickerdoodles in combination with banana? Also a very nice flavor combination. Or what about some Snickerdoodle Blondies? Sounds fancy, right? ;)

INGREDIENTS / ZUTATEN
(for 14-15 cookies)
For the dough:
1/4 cup (60g) butter, softened
1/4 cup (50g) sugar
1/4 cup (50g) brown sugar
1 medium egg
1 1/4 cup (160g) all-purpose flour
1/4 tsp. baking soda
1/2 tsp. cinnamon
some fresh ground nutmeg
1 pinch of salt
1/4 cup (60ml) eggnog/eierlikör
For the coating:
1/4 cup (50g) sugar
1 tsp. cinnamon
(Für 14-15 Cookies)
Für den Teig:
60g weiche Butter
50g Zucker
50g brauner Zucker
1 Ei (M)
160g Mehl (Type 405)
1/4 TL Natron
1/2 TL Zimt
etwas frische Muskatnuss
1 Prise Salz
60ml Eierlikör (Eggnog)
Für den Zuckermantel:
50g Zucker
1 TL Zimt


DIRECTIONS / ZUBEREITUNG
1. Add the butter and sugars to a large bowl and mix until creamy. Add the egg and mix in well. Mix the flour with baking soda, cinnamon, ground nutmeg, and salt and add together with the eggnog to the bowl and mix until just combined. Place the dough in the fridge for about an hour.
2. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside. Mix the sugar and cinnamon for the coating in a small bowl. Use a cookie scoop or tablespoon and form small balls of the size of a walnut and roll in the cinnamon-sugar mixture. Place with enough space in between on the baking sheet (the cookies spread a bit) and bake for about 8 minutes. Take out of the oven and let cool down a bit on the baking sheet, then transfer to a wire rack to cool down completely.
1. Die Butter mit den beiden Zuckersorten in eine große Schüssel geben und zusammen hell und luftig aufschlagen. Das Ei dazugeben und gut unterrühren. Das Mehl mit Natron, Zimt, Muskatnuss und Salz vermischen und dann zusammen mit dem Eierlikör zur Schüssel dazugeben und nur kurz verrühren. Den Teig für etwa 1 Stunde in den Kühlschrank stellen.
2. Den Backofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen. Den Zucker mit dem Zimt in einer kleinen Schüssel vermischen. Mit einem Eisportionierter oder zwei Esslöffeln kleine Kugeln formen (etwa walnussgroß) und dann in der Zimt-Zuckermischung rollen, bis sie gleichmäßig damit bedeckt sind. Die Kugeln mit genügend Abstand (sie laufen etwas auseinander) auf das vorbereitete Blech setzen und dann für etwa 8 Minuten backen. Aus dem Ofen nehmen und auf dem Blech etwas abkühlen lassen, dann auf ein Kuchengitter legen und komplett auskühlen lassen.
