Description

A classic cookie recipe with a little twist – Snickerdoodle cookies made with eggnog aka. Eierlikör (if you are coming from Germany). Delicious!


Ingredients

For the dough:
1/4 cup (60g) butter, softened
1/4 cup (50g) sugar
1/4 cup (50g) brown sugar
1 medium egg
1 1/4 cup (160g) all-purpose flour
1/4 tsp. baking soda
1/2 tsp. cinnamon
some fresh ground nutmeg
1 pinch of salt
1/4 cup (60ml) eggnog/eierlikör

For the coating:
1/4 cup (50g) sugar
1 tsp. cinnamon


Instructions

1. Add the butter and sugars to a large bowl and mix until creamy. Add the egg and mix in well. Mix the flour with baking soda, cinnamon, ground nutmeg, and salt and add together with the eggnog to the bowl and mix until just combined. Place the dough in the fridge for about an hour.

2. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside. Mix the sugar and cinnamon for the coating in a small bowl. Use a cookie scoop or tablespoon and form small balls of the size of a walnut and roll in the cinnamon-sugar mixture. Place with enough space in between on the baking sheet (the cookies spread a bit) and bake for about 8 minutes. Take out of the oven and let cool down a bit on the baking sheet, then transfer to a wire rack to cool down completely.
