How about a quick and delicious snack/lunch/dinner option? Do you like Grilled (Panini) Sandwiches? I mean… who can say “no” to some melted cheese. Am I right? ;) Well… today I got a pretty easy to prepare grilled sandwich recipe with loads of mozzarella, tomatoes, basil, and balsamic cream. Sounds familiar? Maybe because that are the main ingredients of a Caprese salad ;P
There are times when I am not really in the mood for cooking. Actually happens quite often, to be honest. That does not mean I am not hungry… so a grilled sandwich is the easiest option on days like that. We always have bread at home, cheese as well, so throwing some bread, cheese, and other stuff into the panini grill or into a frying pan is a no-brainer. Those panini makers are the easiest way to make the sandwich because, but making a grilled cheese sandwich with a griddle pan is also quite easy. Just needs more attention so it does not burn. And you normally use more fat for frying – which is not necessarily bad since you get more flavor… ;P
Anyway. These Caprese Panini Sandwiches are really easy to prepare and done in no time. Probably faster than you can eat it. All you need is some pesto, tomatoes, cheese, plus some basil if you like that, and a good amount of balsamic reduction – storebought or homemade. That’s it. Off to the panini grill, or into a frying pan, and a few minutes later everything is ready so you can stuff your face with it ;P

INGREDIENTS / ZUTATEN
(2 sandwiches)
4 slices of sourdough bread
3-4 tsp. pesto Genovese
3-4 cherry tomatoes, sliced
4.4 oz. (125g) fresh mozzarella, sliced
some fresh basil
some Crema con Aceto Balsamico*
some grated Parmigiano (optional)
salt, pepper
1 tbsp. butter (or mayonnaise)
(2 Sandwiches)
4 Scheiben Sauerteigbrot
3-4 TL Pesto Genovese
3-4 Romana/Kirschtomaten, in Scheiben geschnitten
125g frischer Mozzarella, in Scheiben geschnitten
etwas frisches Basilikum
etwas Crema con Aceto Balsamico*
etwas geriebener Parmesan (optional)
Salz, Pfeffer
1 EL Butter (oder Mayonnaise)
DIRECTIONS / ZUBEREITUNG
1. Spread the pesto evenly on all four slices of bread, slice the tomatoes, and place on two of the bread slices. Slice the mozzarella as well and place on top of the tomatoes. Add some fresh basil leaves and drizzle with some crema con Aceto Balsamico. Sprinkle with some grated Parmigiano (optional), season with salt and pepper, and then close the sandwiches with the two other bread slices. Spread the butter (or mayonnaise) on the outside of the sandwiches.
2. Heat up a panini grill or a griddle pan and grill the sandwiches from both sides until nicely browned and the cheese has melted. Cut in half and serve hot.
1. Das Pesto gleichmäßig auf den vier Brotscheiben verstreichen, die Tomaten in Scheiben schneiden und auf zwei der Brotscheiben verteilen. Den Mozzarella ebenfalls in Scheiben schneiden und dann auf die Tomaten legen. Einige frische Basilikumblätter darauf verteilen und mit etwas Crema con Aceto Balsamico beträufeln. Wer mag, kann noch etwas frisch geriebenen Parmesan darüberstreuen (optional) und dann mit Salz und Pfeffer würzen. Die beiden verbliebenen Brotscheiben mit dem Pesto (nach Innen) auflegen und die Sandwiches damit schließen. Die Außenseiten des Sandwiches mit Butter (oder etwas Mayonnaise) bestreichen.
2. Einen Panini Grill oder eine Grillpfanne erhitzen und dann die Panini Sandwiches darin rundum goldbraun grillen/anbraten. Der Käse sollte schön geschmolzen sein. Sandwiches halbieren und heiß servieren.
