Quick & Easy Kimchi Grilled Cheese

    I decided to start this year on my blog with something savory. Nothing sweet today. Don’t worry, I did not turn into one of those blogs that suddenly only post sugar-free and calorie-free recipes in January… well, a bit less of everything can’t hurt actually. Anyway. There might not be any sugar in this recipe today, but definitely some calories. Delicious ones and good ones. Grilled cheese sandwiches are delicious, right? And those sandwiches get even better when some Kimchi is involved! So get ready for a delicious Kimchi Grilled Cheese Sandwich! So good!

    I have to admit it – I’m a huge fan of grilled cheese sandwiches. Some years of my life I was basically eating them every day… well almost. Let’s say a lot. They are not the healthiest way of eating, I have to admit that. You can make them less »heavy«. Just use less butter for frying or use olive oil… less cheese also helps. I know that is a weird suggestion, but it works.

    These sandwiches here are partially »healthy« I’d say. Don’t think about the cheese and focus on the Kimchi and suddenly these little fellas are really a good choice. You know that Kimchi is really healthy with all its vitamins, minerals and fiber? It is. It really is. And it makes these sandwiches excellent in terms of flavors. The healthy effect might not be that great because they are still grilled cheese sandwiches, but the Kimchi is a really nice addition to the cheese and roast beef and makes the sandwiches über-delicious!

    You can prepare Homemade Kimchi at home with a little effort – it’s doable. But you could also just go to the next Asian supermarket and buy some there. Or maybe you can get some in a Korean restaurant? They should sell that fermented cabbage as well.

    Anyway, I am sure you can find it… and then you can make these sandwiches. Or maybe some delicious Kimchi Fried Rice? Also something we do a lot whenever we have some homemade kimchi in the fridge.

    INGREDIENTS / ZUTATEN

    • English

    (for 4 sandwiches)

    8 slices bread (e.g. rye bread)
    14 oz. (400g) roast beef, thinly sliced
    8 slices of cheese (e.g. cheddar or raclette cheese etc.)
    3.5 oz. (200g) Kimchi

    some butter for frying

    (für 4 Sandwiches)

    8 Brotscheiben (z.B. Bauernbrot)
    400g Roastbeef, dünn geschnitten
    8 Scheiben Käse (z.B. Cheddar, Racelette Käse etc.)
    200g Kimchi

    etwas Butter zum Anbraten

    DIRECTIONS / ZUBEREITUNG

    1. Spread some butter on two slices of the bread (per sandwich) and place them in a (not too hot) griddle pan with the buttered side facing down and let them brown a bit.

    2. Top each slice of bread with a slice of cheese. Add 1/4 of the roast beef and 1/4 of the kimchi to one of the slices of bread and close with the second slice of bread that is currently in the pan as well. Fry the sandwich on both sides until the bread is golden brown, crisp, and the cheese has melted – this takes about 3-4 minutes. It’s easier if you put a lid on the pan. Repeat with the remaining bread and toppings.

    1. Je zwei Scheiben Brot für ein Sandwich auf der Außenseite mit Butter bestreichen und dann mit den gebutterten Seiten nach unten in eine nicht zu heiße (Grill-) Pfanne legen und etwas anrösten lassen.

    2. Die Brotscheiben mit je einer Scheibe Käse belegen, auf einer der Brotscheiben 1/4 des Roastbeefs und des Kimchi verteilen. Das Sandwich mit der zweiten (mit Käse belegten) Brotscheibe zusammenklappen und dann so lange auf beiden Seiten anrösten, bis der Käse geschmolzen ist und das Brot goldbraun und knusprig ist – dauert etwa 3-4 Minuten. Wenn man einen Deckel auf die Pfanne legt, dann erleichtert es das Ganze etwas. Mit den übrigen Brotscheiben und Zutaten wiederholen.

    Description

    A delicious grilled cheese sandwich with some roast beef and Korean kimchi and loads of cheese – the combination and flavors are so good! We love it!


    Ingredients

      Wow, sieht wie immer GROßARTIG aus, bei mir steht seid ein paar Tagen auch selbstgemachtes Kimchi in der Küche bzw inzwischen im Kühlschrank, man bin ich gespannt wie es schmecken wird, kann es kaum abwarten!
      Noch schnell hinterher, ein Frohes neues Jahr mit einer extra Portion Gesundheit und ganz viele kleine Abenteuer.
