I decided to start this year on my blog with something savory. Nothing sweet today. Don’t worry, I did not turn into one of those blogs that suddenly only post sugar-free and calorie-free recipes after in January… but a bit less of everything can’t hurt actually :P Well, there might not be sugar in this recipe today, but definitely some calories. Delicious ones and good ones ;) Grilled cheese sandwiches are delicious, right? And those kinds of sandwiches get even better when Kimchi is involved!

I have to admit it – I’m a huge fan of grilled cheese sandwiches. Some years of my life I was basically eating them every day… well almost. Let’s say a lot. They are not the most healthy way of eating, have to admit that. You can make them less “heavy” – use less butter for frying or use olive oil… less cheese also helps. I know that is a weird suggestion, but it works :P
These sandwiches here are partially healthy I’d say. Don’t think about the cheese and concentrate on the Kimchi and suddenly these little fellas are really a good choice ;) You know that Kimchi is really healthy with all its vitamins, minerals and fiber? It is. It really is. And it makes these sandwiches really good. The healthy effect might not be that great – they are still grilled cheese sandwiches, you have to admit that – but the Kimchi is a really nice addition to the cheese and roast beef and makes the sandwiches über-delicious!

You can make Kimchi at home with a little effort – it’s doable – but you can also just go to the next Asian supermarket and buy some there. Or maybe you can get some in a Korean restaurant? Well, I am sure you can find it… and then make these sandwiches ;)
INGREDIENTS / ZUTATEN
8 slices bread (e.g. rye bread)
14 oz. (400g) roast beef, thinly sliced
8 slices of cheese (e.g. cheddar or raclette cheese etc.)
3.5 oz. (200g) Kimchi
butter for frying
8 Brotscheiben (z.B. Bauernbrot)
400g Roastbeef, dünn geschnitten
8 Scheiben Käse (z.B. Cheddar, Racelette Käse etc.)
200g Kimchi
Butter zum Anbraten

Kimchi Grilled Cheese

Description
Delicious grilled cheese sandwiches with roast beef and Korean kimchi – so good!
Ingredients
- 8 slices bread (e.g. rye bread)
- 14 oz. (400g) roast beef, thinly sliced
- 8 slices of cheese (e.g. cheddar or raclette cheese etc.)
- 3.5 oz. (200g) Kimchi
- butter for frying
Instructions
- Spread some butter on two slices of the bread and place in a (not too hot) griddle pan with the buttered side facing down. Top each bread with a slice of cheese. Add 1/4 of the roast beef and kimchi to one of the slices of bread and close with the second slice of bread that is currently in the pan as well. Fry on both sides until the bread is golden brown, crisp and the cheese has melted – takes about 3-4 minutes. It’s easier if you put a lid on the pan. Repeat with the remaining bread and toppings.

Wow, sieht wie immer GROßARTIG aus, bei mir steht seid ein paar Tagen auch selbstgemachtes Kimchi in der Küche bzw inzwischen im Kühlschrank, man bin ich gespannt wie es schmecken wird, kann es kaum abwarten!
