This happens to everybody I guess – you make yourself some delicious wraps with chicken and salad for dinner and because the package has more tortillas inside than you needed you got some leftover tortillas. What can you do with them? More wraps? Hmm… is there another option maybe? Absolutely! Delicious Wheat Tortilla Tarte Flambée, for example – savory or sweet. A great option to use leftover tortillas.
With ever-dwindling resources on our planet, food waste and recycling have been an important topic for a long time already – something that should not be ignored. Of course, it would be easier if you just throw food leftovers in the trash and then forget about it, right? Well… that’s definitely something that should be avoided. Most leftovers can easily be transformed into something new and delicious – „Eat it! Don’t waste it!” is something my mom would say ;)
For this recipe today I used leftover tortillas and made some very simple tarte flambée with it. For a pizza, the tortillas would probably be too thin and would not be able to carry many toppings, but for tarte flambée, with some sour cream, bacon, and onions the leftover tortillas are just perfect.
I baked the tortilla tarte flambée inside a large (33cm) pizza tray made from recycled aluminum –which you can currently get at PENNY supermarkets all over Germany through the current loyalty points program*. The Flammkuchen (as we call them in Germany) become beautifully crispy when you use a pizza tray like that and you can easily serve the tarts with it – no need to handle an oversized baking tray. However, you should not cut the tarte flambée inside the pizza tray. As you probably all know – trays, pans, etc. with non-stick coatings should not be approached with sharp knives if you want to have fun with them for a long time ;P
Anyway. In case you ever have some leftover tortillas you know what to do now: Flammkuchen! The topic of recycling and food waste has already been addressed in a post here some time ago. Together with my collab partner PENNY, I created some delicious bakes for their current loyalty points program* – great recipes that can help fight food waste. You probably know that from your own experience already… sometimes you buy stuff to eat and for some reason you end up with leftovers. Instead of throwing food into the waste bin, in most cases, you can use the leftovers to create something new and delicious.
The “recycling” recipes that have been published on the blog so far as part of the campaign (and the ones that are still to come) are all suitable for the baking pans you can get as a reward for the PENNY loyalty points campaign*. INGREDIENTS / ZUTATEN
2 large wheat tortillas
4.4 oz. (125g) bacon, diced
1 onion, cut into rings
2-3 tbsp. sour cream
2-3 tbsp. crème fraîche
some lemon juice
salt, pepper
some chives, chopped
2 große Tortilla Fladen
125g Speck, gewürfelt
1 Zwiebel, in Ringe geschnitten
2-3 EL Schmand
2-3 EL Crème fraîche
etwas Zitronensaft
Salz, Pfeffer
etwas Schnittlauch, gehackt
DIRECTIONS / ZUBEREITUNG
2. Fry the diced bacon briefly in a pan without fat so it can brown slightly and get crisp. Remove from heat and set aside.
3. Peel the onion and cut it into thin rings. Set aside.
4. Mix sour cream with crème faîche and some lemon juice. Season with salt and pepper.
5. Spread the cream on top of the tortillas to cover them, edge to edge. Sprinkle evenly with the bacon onion rings. Place the first tortilla carefully in the hot baking pan and bake for 5-7 minutes. The edges of the tortilla should be crispy and the cream should bubble a bit. Remove from the oven. Season with more salt and pepper, if you like, and then sprinkle with some chopped chives. Serve immediately.
6. While enjoying the first tarte flambée, the next one can already be baked.
2. Den gewürfelten Speck in einer Pfanne ohne Fett kurz anbraten und etwas Fett auslassen. Vom Herd ziehen und zur Seite stellen.
3. Die Zwiebel schälen und in dünne Ringe schneiden. Zur Seite stellen.
4. Schmand und Crème faîche mit etwas Zitronensaft verrühren. Mit Salz und Pfeffer würzen.
5. Die Tortilla Fladen bis zum Rand mit der Creme bestreichen. Speckwürfel und Zwiebelringe darauf verteilen. Den ersten Fladen vorsichtig in die aufgeheizte Backform legen und dann für 5-7 Minuten backen. Der Rand des Fladens sollte knusprig geworden sein und die Creme etwas blubbern. Aus dem Ofen holen, nach Belieben noch einmal mit Salz und Pfeffer würzen und dann mit etwas gehacktem Schnittlauch bestreuen. Sofort servieren.
6. Während man den ersten Flammkuchen genießt, kann der nächste schon gebacken werden.

Ingredients
