Today’s Cookie Friday cookies are easy and quick to prepare. When it comes to cookies I really try to keep it quick and simple. Most of the time ;) These Peanut Butter & Jelly Cookies are done in no time. If you are a fan of the flavor combination of sweet and salty, these are the ones you want to bake ;)
Is everyone in the Christmas spirit yet? If not, it’s about time! Maybe a little Advent calendar, something to nibble on, and Christmas music will do the trick and get you in the right mood? »Last Christmas« is already playing on a continuous loop around here. I’ve been to Portugal two years ago (yes, it’s been a while) for some sunbathing, beach hopping (the Algarve has the best beaches in Europe!) and a lot of eating and drinking. The last two things were very important for us. There is so much awesome food you have to try in Portugal! The fish! The pastries! And Roasted Pepper Jam. Yes… you can make jam with veggies ;)

It is bacon jam! It is bacon jam with bourbon whiskey!! Exactly – dreams do come true! I guess every man out there thinks now “Why haven’t I thought about this earlier? So many years of my life passed by – meaningless – until now!” ;)
The strawberry season is over – if you make your own strawberry jam, you can have those delicious berries all year long.
Making jam is easier than most people think. Fresh fruits in small pieces, jam sugar, some lemon juice and some mason jars and you are almost done. ;) The only thing you have to be careful with is the amount of fruits/liquid you’re using – here you have to be precise whatever the jam sugar instruction says. If you use too much liquid, the jam will not get thick enough and the result will be more like a sauce. ;)
Making your own jam is something you can do pretty easily. And if you do it, while the fruits and berries are in season, it’s also pretty cheap. The only downside is – you will have a lot of glasses with delicious jam piling up in your cabinets. For me, as a person that does not eat sooo much jam when having breakfast, it’s a real pity. ;)
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
