Christmas is the time for cookies, right? If you like to bake more often, you probably already have a list of Christmas cookie recipes you’re gonna bake over and over again. We have a list like that too, but we still try to bake something new every year. This time we made these Slice ‘n’ Bake Xmas Cookies with lots of chocolate for the first time. Super simple cookies that are easy to make and taste wonderful. Saying that… probably candidates to be made again next year! ;P
Advent is the time for Christmas cookies. There is no other time of year when people are baking more cookies. Even though you could bake many of those cookies any other day as well. I wouldn’t mind if someone served me a few of these delicious Xmas Wreath Cookies with my coffee at the height of summer. They are delicious all year round. Some people might say the decorations are too »Christmassy« for July or August. But who cares? ;P
The weeks before Christmas are the time for Christmas markets, mulled wine, bratwurst and candied almonds aka. »gebrannte Mandeln«. You can smell the nuts basically everywhere. Sooo good! Instead of just enjoying the smell of the nuts and nibbling on them, you can use them for baking as well. These Candied Almonds & Chocolate Nougat Cookies are the perfect sweet treat to use up »leftover nuts«… should there be any leftover after a visit to the Christmas market. ;P
There are some recipes that you make over and over again. For us, these Chocolate Amarettini Cookies are one of these recipes. A family favorite! I don’t know how many times I’ve baked them… and not just around Christmas. These little almond-chocolaty balls are great all year round! Why limit yourself to just a few weeks of the year when everyone likes it? ;P
We are baking Christmas cookies pretty much every year, and some of them we do over and over again. The classics, you could say. We have a bunch of Christmas cookies we do constantly with the same old recipe that has been used for decades. But we also got cookies that are based on classics, but kind of »reinterpreted« from time to time. These Biscoff Thumbprint Cookies aka. Engelsaugen, for example. They are based on a classic recipe for Engelsaugen with jam filling, but here the filing is delicious Biscoff spread. So good!
Christmas and Christmas cookies go together like a Christmas tree and the presents underneath. One would only be half as good without the other ;) Baking the same Christmas cookies every year is a bit boring though. That’s why I love to adapt classic recipes from time to time. Like I did with these Chocolate Biscoff Speculoos Spitzbuben. Based on classic sandwich cookies with a jam filling these cookies here got a little update with chocolate and Biscoff spread. So good. ;)
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
