Strawberry season is simply the best time of the year (along with rhubarb season)! As soon as the small strawberry booths pop up all over the city where farmers sell strawberries it’s clear – the time has come ;P Today I used those little red fellas to make a simple and easy Strawberry Galette. Served with some vanilla ice cream and/or whipped cream… one of the best desserts in the whole wide world. Really. I could eat it all summer long ;P
Did you know that strawberries are actually nuts? Yes. It sounds weird but it’s true. No berries have been harmed to make this galette here. Only nuts ;P If you do not believe me – google it!
Anyway. Eyes on the galette ;)
A strawberry galette (or any other galette) is a very simple and easy dessert. The dough is prepared in no time and can be done without any special equipment actually. No kitchen machine or mixer necessary. A bowl, a pastry cutter (or simple knife), and your hands are all you need. You can prepare the dough on the day of baking, or prepare it up to 3 days in advance and store it in the fridge. So if you want to be constantly “ready for combat” – keep some dough in the fridge in case guests come over spontaneously ;)
The strawberry topping is also extremely easy peasy in this case here ;) Wash the strawberries, chop them, mix with a few other ingredients and that’s it. When the time for baking has come, you simply roll out the dough, throw the strawberries on top, fold the dough over the topping around the edges and that’s it actually. To get a nice golden brown edge you can brush the dough with some egg and sprinkle it with sugar – then all you have to do is place it in the oven. About half an hour later you have a delicious smelling and bubbling galette. I recommend eating it while still a bit warm with the (earlier mentioned) vanilla ice cream and/or whipped cream. So good!

INGREDIENTS / ZUTATEN
For the dough:
1 cup (130g) all-purpose flour
1 tsp. xylitol or sugar
1/4 tsp. salt
1/3 cup (75g) cold butter
2-3 tbsp. ice water, plus more if needed
For the topping:
10 oz. (300g) fresh strawberries, quartered
2 tbsp. xylitol or sugar
1 tbsp. lime juice
1/2 tsp. vanilla extract
1 tbsp. cornstarch
some heavy cream for brushing
some coarse raw sugar (optional)
Für den Teig:
130g Mehl (Type 550)
1 TL Xylit (oder Zucker)
1/4 TL Salz
75g kalte Butter
2-3 EL Eiswasser, plus ggf. etwas mehr
Für den Belag:
300g frische Erdbeeren, geviertelt
2 EL Xylit (oder Zucker)
1 EL Limettensaft
1/2 TL Vanille Extrakt
1 EL Speisestärke
etwas Sahne zum Bestreichen
etwas grober Rohzucker (optional)
DIRECTIONS / ZUBEREITUNG
2. Wash and dry the strawberries, cut them in quarters, and add them to a bowl. Add the xylitol (or sugar), lime juice, vanilla extract, and cornstarch and mix until well combined. Set aside.
3. Preheat the oven to 375°F (190°C). Line a baking sheet with baking parchment. Roll out the dough directly on the baking parchment – the dough circle should have a diameter of about 9 inches (23cm). Place the strawberry mixture on top and fold the edges over the strawberry topping. Brush the edges with heavy cream and sprinkle raw sugar all over the galette (optional). Bake for about 30-35 minutes or until the topping is bubbling and the edges have a nice golden color. Take out of the oven and let cool down. Serve with vanilla ice cream or some whipped cream.
2. Die Erdbeeren waschen, trocknen und dann vierteln. In eine Schüssel geben und mit dem Xylit (oder Zucker), Limettensaft, Vanille Extrakt und Speisestärke vermischen und zur Seite stellen.
3. Den Ofen auf 190°C (375°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen. Den Teig direkt auf dem Backpapier ausrollen, bis ein Teigkreis mit etwa 23cm (9 inches) Durchmesser entsteht. Die Erdbeeren in die Mitte setzen und dann den Teig am Rand über die Erdbeeren schlagen, damit später nichts ausläuft. Den Rand mit etwas Sahne bestreichen und die Galette mit etwas Rohrzucker (optional) bestreuen. Für etwa 30-35 Minuten backen – die Erdbeeren sollten blubbern und der Rand der Galette eine schöne goldbraune Farbe bekommen haben. Aus dem Ofen holen und etwas abkühlen lassen. Mit Vanilleeis oder etwas Schlagsahne servieren.

Instructions
1. Add the flour, xylitol (or sugar), and salt to a bowl and mix to combine. Add the cold butter in small pieces and cut it into even smaller pieces with a pastry blender – the mix should almost look like coarse sand. Add some ice water and mix in. Knead until the dough comes together. If the dough still seems too try, add some more water. Be careful not to add too much water – the dough should not feel overly sticky. Wrap in plastic wrap and place in the fridge for about 2 hours.
