Just kidding – but if you have a food blog and post a lot of recipes and pictures of baked stuff – people have expectations ;)
For example when you’re invited to a party…. No, a bottle of cheap wine won’t do it anymore. You are forced to bake something. Well not really forced (my friends still appreciate cheap wine), but people want something baked from you. If I say it like that it still sounds forced… ;)
Anyways – expectations, you know… in that case it is good to have a recipe at hand that is easy and quick to make like these Mini Banana Streusel Loaves. People like mini versions of regular sized food and for a party it is perfect anyways – no cutlery needed and you can eat it with one hand – and the other hand can hold the glass of cheap wine the other friend brought ;)
Back to the mini loaves… quick and easy to make. Delicious of course because there is banana in it and streusel on top. Not much more to say ;) If you’re looking for a baking tin for those mini loaves, you might take a look here (Link to Amazon Germany) – there are many different sizes for those kind of baking tins out there, but I used the one from that link. The amount of mini loaves might vary depending on the size of your baking tin.
INGREDIENTS / ZUTATEN
For the streusel:
1/3 cup (70g) brown sugar
2 tbsp. all-purpose flour
1/8 tsp. ground cinnamon
1 tbsp. butter, at room temperature
For the dough:
1 1/2 cups (200g) all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
2 large bananas, mashed
1/2 cup (100g) sugar
1/4 cup (60g) brown sugar
1 large egg
1/3 cup (80ml) vegetable oil
2 tsp. vanilla extract
Für die Streusel:
70g brauner Zucker
2 EL Mehl (Type 405)
1/8 TL gemahlener Zimt
1 EL weiche Butter
Für den Teig:
200g Mehl (Type 405)
1 TL Natron
1 TL Backpulver
1/2 TL Salz
1 TL gemahlener Zimt
2 große Bananen, zerquetscht
100g Zucker
60g brauner Zucker
1 Ei (L)
80ml Pflanzenöl
2 TL Vanille Extrakt
DIRECTIONS / ZUBEREITUNG
2. Start with the streusel. In a bowl combine brown sugar, flour and cinnamon. Add the butter and rub all between your fingers, until streusel form. Place in the fridge until needed.
3. In bowl combine the flour, baking soda, baking powder, salt and cinnamon. In another large bowl mix the mashed bananas, sugars, egg, oil and vanilla until well combined. Add the flour mixture and mix until just combined – do not overmix.
4. Fill evenly in the mini loaves tin and sprinkle with the streusel. Bake for 8 minutes, then reduce the heat to 350˚F (175°C) and bake for 10-12 minutes more or until a toothpick inserted into center of a mini loaf comes out clean. Take out of the oven and let cool down in the tin for some time and then remove and let cool down completely on a wire rack.
2. Mit den Streuseln anfangen. In einer Schüssel den braunen Zucker mit Mehl und Zimt vermischen. Butter zugeben und alles mit den Fingern zu Streiseln verreiben. Bis zur weiteren Verwendung in den Kühlschrank stellen.
3. In einer Schüssel das Mehl mit Natron, Backpulver, Salz und Zimt vermischen. In einer zweiten großen Schüssel die zerquetschten Bananen mit weißem und braunem Zucker, dem Ei, Öl und Vanille Extrakt verrühren, bis alles gut vermengt ist. Mehlmix zugeben und nur kurz unterrühren – nicht zu viel rühren.
4. Den Teig gleichmäßig auf die Formen verteilen und mit den Streuseln bestreuen. Für 8 Minuten backen und dann die Temperatur auf 175°C (350°F) reduzieren und weitere 10-12 Minuten backen – mit einem Zahnstocher testen, ob noch Teig kleben bleibt und erst herausnehmen, wenn der Zahnstocher sauber herauskommt. In der Form kurz abkühlen lassen und dann herausnehmen und auf einem Kuchengitter komplett auskühlen lassen.
