Easter is over – which means we can eat and drink again whatever we want. Finally! No more holding back ;) That’s why I got a nice 2-in-1 cake for you today. It’s a dessert and a boozy drink at the same time (kind of): Gin Tonic Cake!

OK – cake and drink at the same time might not be the truth. Some would say it’s “Fake News” ;) But hey… it is almost true. We have a delicious cake that is made with all the ingredients you would normally use for a Gin Tonic. So drinking might not really work, but the flavors are definitely there! Everyone who loves to order that drink at a bar – you might want to try this cake! ;)
The gin from the Gin Tonic is in the dough and some as well in the sugar glaze on top. The tonic was used to create a soaking syrup which makes the cake moist and flavorful. All together really tastes a bit like a Gin Tonic ;) It probably does not taste like the Gin Tonic from your favorite bartender but the flavors are definitely there. I mean this should still be a dessert and not another way to sneak in daytime drinking :P

Saying that – the cake is definitely not made for kids! The amount of alcohol is too much to serve to kids. Even though some might get lost while baking, there is still enough in the finished cake.
In my opinion, the cake would also work well if you make it a Vodka Lemon Cake or maybe Aperol Spritz? Both have citrus flavors as a base and that should work well in a cake like that one here. Just in case you want to try something else ;)
INGREDIENTS / ZUTATEN
7 oz. (200g) butter, softened
1 cup (200g) sugar
4 medium eggs
1 1/2 cups (200g) all-purpose flour
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
zest from 1 organic lime
1 tbsp. lime juice
1/3 cup (80ml) gin
For the syrup:
1/4 cup (50g) sugar
1/4 cup (60ml) tonic water
1 tbsp. lime juice
1 tbsp. gin
For the glaze/decoration:
1 cup (130g) confectioners’ sugar
1-2 tbsp. gin
lime slices
200g Butter
200g Zucker
4 Eier (M)
200g Mehl (Type 550)
2 1/2 TL Backpulver
1/4 TL Natron
1/2 TL Salz
Abrieb von 1 Bio-Limette
1 EL Limettensaft
80ml Gin
Für den Sirup:
50g Zucker
60ml Tonic Water
1 EL Limttensaft
1 EL Gin
Für die Glasur/Deko:
130g Puderzucker
1-2 EL Gin
Limettenscheiben

DIRECTIONS / ZUBEREITUNG
2. Add the butter and sugar to a large bowl and mix until light and fluffy. Add the eggs one after another and mix well after each addition. Mix the flour with baking powder, baking soda, salt, and lime zest. Add with the lime juice and gin to the bowl and mix until just combined. Pour the batter into the prepared baking tin and bake for 55-60 minutes or until a wooden skewer inserted into the center comes out clean.
3. While the cake is baking, add the sugar, tonic water, and lime juice to a small saucepan and bring to a boil. Let cook for a minute or two until the mixture thickens. Take off the heat and add the gin. Set aside.
4. As soon as the cake is done baking, take out of the oven and poke holes with a wooden skewer into the cake. Drizzle with the gin syrup and let cool down within the tin.
5. For the glaze mix the confectioners’ sugar with the gin until you get a nice and thick glaze (you might not need all of the gin. Take the cake out of the baking tin and place on a serving plate. Pour the glaze over the cake and decorate with some sliced limes. Let dry and serve.
2. Die Butter und den Zucker in eine große Schüssel geben und auf höchster Stufe hell und luftig aufschlagen. Die Eier einzeln dazugeben und jeweils sehr gut unterrühren. Mehl mit Backpulver, Natron, Salz und Limettenabrieb vermischen und dann zusammen mit dem Limettensaft und Gin zur Rührschüssel dazugeben und nur kurz unterrühren. Den Teig in die Form füllen und dann für 55-60 Minuten backen. Mit einem Holzspieß testen ob noch Teig kleben bleibt und erst aus dem Ofen holen, wenn er sauber herauskommt.
3. Während der Kuchen im Ofen ist, kann man den Sirup zubereiten und dafür den Zucker mit Tonic Water und Limettensaft in einem kleinen Topf zum Kochen bringen. Für kurze Zeit kochen lassen, damit die Flüssigkeit etwas andicken kann. Wenn ein nicht zu dickflüssiger Sirup entstanden ist vom Herd nehmen und den Gin unterrühren. Zur Seite stellen.
4. Sobald der Kuchen fertig ist, aus dem Ofen holen und mit einem Holzspieß überall kleine Löcher hineinstechen. Den Kuchen dann mit dem Sirup einstreichen und in der Form abkühlen lassen.
5. Für die Glasur den Puderzucker nach und nach mit dem Gin verrühren, damit sich eine schöne, dickflüssige Masse bildet. Den Kuchen aus der Form lösen und auf eine Servierplatte setzen. Die Glasur darübergießen und mit ein paar Limettenscheiben dekorieren. Bis zum Servieren trockenen lassen.
