Today’s cookies are a bit smaller than the ones I made in the last couple weeks. For example these Peanut Butter Stuffed Chocolate Chip Cookies or these XXL Caramel Stuffed Cookies with Snickers ;) Nothing stuffed this time. Just good old Funfetti Cookies. Quick and easy to prepare. Quick and easy to eat… and delicious of course! ;)

Why are they called “Funfetti” anyway?! Well… cause when you throw confetti it means someone is having fun. Right?! I guess that’s why they mixed up these two words for these colorful cookies. Even though these cookies promise to be fun, do not throw them ;P
I mean – if you really want to throw cookies at somebody – feel free to do it! But it would be a waste of good cookies if they end up on the floor. I recommend to throw them into a bowl or box and then throw the bowl or box. Just kidding… just pass it around ;P
As always – when saying “quick and easy” I mean quick and easy. The dough is done in no time. Rolling the dough balls in the sprinkles is also easy and baking… well the oven is doing all the work here ;) No excuse not to make these cookies immediately!
INGREDIENTS / ZUTATEN
1 cup (230g) butter, softened
1 1/2 cups (300g) sugar
1 large egg
1 large egg yolk
2 tsp. vanilla extract
3 cups (390g) all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
rainbow sprinkles for rolling
230g Butter
300g Zucker
1 Ei (L)
1 Eigelb (L)
2 TL Vanille Extrakt
390g Mehl (Type 405)
1 TL Backpulver
1/2 TL Salz
bunte Zuckerperlen

DIRECTIONS / ZUBEREITUNG
2. Add the butter and sugar to a large bowl and mix until light and fluffy. Add the egg, egg yolk, and vanilla extract and mix until well combined. Mix the flour with baking powder, and salt and add to the bowl, mix until just combined. Make small balls out of the dough (use a cookie scoop or ice cream scoop to get the same amount of dough for each cookie), roll the balls in the rainbow sprinkles and place the balls with enough space in between on the baking sheet. Bake for 9-10 minutes. Take out of the oven and let cool down on the baking sheet for some time – they will deflate a bit – then transfer to a wire rack and let cool down completely.
2. Die Butter mit dem Zucker in eine große Schüssel geben und hell und luftig aufschlagen. Ei, Eigelb und Vanille Extrakt dazugeben und gut unterrühren. Das Mehl mit Backpulver und Salz vermischen und dann zur Schüssel dazugeben und nur kurz unterrühren, bis sich alles verbunden hat. Mit einem Cookie Scoop (Eisportionierer) oder einem Esslöffel Teigportionen abstechen und zu Kugeln formen. Diese Kugeln in den Zuckerperlen rollen, bis sie komplett bedeckt sind und dann mit genügend Abstand zueinander auf das Blech setzen und 9-10 Minuten backen. Auf dem Blech etwas abkühlen lassen, sobald man sie bewegen kann auf ein Kuchengitter legen und komplett auskühlen lassen. Mit dem restlichen Teig wiederholen.
