Everyone probably knows these little delicious little “piles” made of cornflakes and chocolate. Either because you know bought them in a supermarket already, or because someone in your family made them for Christmas: Easy Peasy Cornflakes Cookies. One of the easiest Christmas cookies to prepare and probably one of the fastest to finish….
Even though these “cookies” are done in no time – they also tend create a big mess. At least when I do them ;) I’ve been told that many families like to make this kind of sweet treat with children, because they are so easy to do… but I can’t really imagine that the “output” is that big when small children are involved :P I myself have problems finishing these treats with clean hands and a clean workspace – sometimes the chocolate and cornflakes can end up everywhere but on the baking parchment. Small children will probably have more stuck to their fingers than anywhere else and probably end up eating most of it in the process ;P
But maybe that’s the whole point of baking with kids – stuffing them with the chocolate and cornflakes so they don’t need lunch or dinner ;P
Anyway. As mentioned before – in theory, the cookies here are really simple. You mix cornflakes with melted chocolate, maybe add in some chopped nuts or dried fruit and then spoon that mixture onto a big piece of baking parchment. Many small and compact piles of cornflakes and chocolate, which will dry at some point – and thanks to the chocolate stick together (hopefully). It really doesn’t get much easier than this. No baking needed here.
If you temper the chocolate properly, unlike me, you will get a nicer finish for the chocolate. I did not hit the right temperature which led to some grey streaks/spots in the chocolate. I think you can see that on the pictures ;) I don’t mind those light spots because it does not mean that the chocolate is bad or anything like that – but I bet you can do better. Just temper the chocolate properly and everything will look shiny and nice ;)

INGREDIENTS / ZUTATEN
7 oz. (200g) regular cornflakes
1.4 oz. (40g) hazelnut brittle
12.3 oz. (350g) milk chocolate glaze
1.4 oz. (40g) soft butter
1 tsp. vanilla extract
200g Cornflakes
40g Haselnusskrokant
350g Vollmilch-Kuvertüre
40g weiche Butter
1 TL Vanille Extrakt
DIRECTIONS / ZUBEREITUNG
2. Chop the chocolate glaze coarsely and melt in the microwave or over a pot with simmering water. Add the butter and vanilla extract and mix in. Pour over the cornflakes and mix until everything is well coated with the chocolate. Use spoons to place small portions of the mix on the baking sheets – make sure you compress them a bit so they stick together when dried. Let cool down completely and let dry. Store in a cool and dry place.
Note: Also works great with white chocolate and chopped cranberries or apricot pieces.
2. Die Kuvertüre grob hacken und in der Mikrowelle oder über einem Topf mit köchelndem Wasser schmelzen lassen. Weiche Butter und Vanille Extrakt dazugeben und unterrühren. Die Schokoladensoße in die Schüssel mit den Cornflakes gießen und alles vermengen, bis die Cornflakes komplett mit der Schokolade überzogen sind. Mit Löffeln kleine Häufchen auf die Bleche mit Backpapier setzen, dabei darauf achten, dass die Masse gut zusammenhält, sonst fallen die Plätzchen später auseinander. Komplett abkühlen und trocknen lassen. Die Plätzchen kühl und trocken lagern.
Hinweis: Funktioniert auch prima mit weißer Schokolade und Cranberries oder Aprikosenstückchen.
