Happy Cookie Friday! You might ask yourself “Where are the cookies today?” Well… I guess today’s snack option is not really a cookie. It’s a bowl of “balls”. Made with rum. Little balls with rum aka. Rum Truffles. No cookies, but definitely a nice snack option. And that’s what cookies are as well… so why not have some Easy Peasy Rum Truffles for Cookie Friday? Right! ;)
I know it’s a bit of a stretch… over the years I baked a lot of cookies here – every now and then I “turned a blind eye” and interpret the definition for cookies a bit more freely. Today is one of those days again. I still got a lot more ideas for cookies – don’t worry – there are more cookie recipes coming to the blog ;)
Rum Truffles are often made with leftover cake – similar to cake pops. Take some leftover chocolate cake, for example, add rum and some butter, sugar and more chocolate and you will end up with little delicious calorie bombs. My truffles here are also no “lightweights” if you count the calories, but the coconut blossom sugar is slightly better than regular sugar and with the oats instead of cake these little balls are a tad better than anything you can buy in a bakery. If you keep them small you can definitely treat yourself to a few now and then ;)
Anyway. There is not much more to say about these chocolaty truffles. All you got to do is mix the ingredients well, shape them into small balls and roll them in chocolate sprinkles. That’s it. The truffle mixture is not very moist, so you might have trouble getting the chocolate sprinkles to stick immediately. In that case, just press them a bit more into the mix and they should stay in place. The truffles should be stored in the fridge btw. They will stay nice and fresh longer if you keep them cool. Several days definitely.
INGREDIENTS / ZUTATEN
2.5 oz. (70g) butter, softened
1.8 oz. (50g) coconut blossom sugar
4.2 oz. (120g) quick oats
1 oz. (30g) cocoa powder
2 tbsp. dark rum
1/2 tsp. vanilla extract
1.8 oz. (50g) chocolate sprinkles
70g weiche Butter
50g Kokosblütenzucker
120g Haferflocken (Feinblatt)
30g Kakaopulver
2 EL dunkler Rum
1/2 TL Vanille Extrakt
50g Schokostreusel

A sweet treat that is slightly healthier than its “regular” version – Rum Truffles made with oats and coconut blossom sugar.
Ingredients
2.5 oz. (70g) butter, softened
1.8 oz. (50g) coconut blossom sugar
4.2 oz. (120g) quick oats
1 oz. (30g) cocoa powder
2 tbsp. dark rum
1/2 tsp. vanilla extract
1.8 oz. (50g) chocolate sprinkles
Instructions
1. Mix the butter and coconut blossom sugar in a large bowl on high speed until light and creamy. Add quick oats, cocoa, rum, and vanilla extract and mix well until you get a smooth dough. Shape into 15 small balls and roll in the chocolate sprinkles. Leave to dry in the fridge for about 3 hours, then store in a tightly closing tin box (max. 1 week).
