Description

Delicious and easy to prepare cookies with peanut butter and cocoa nibs. The perfect little (not so sweet) treat!


Ingredients

1/4 cup (70g) peanut butter
2 tbsp. butter, at room temperature
1/3 cup (65g) brown sugar
1 medium egg
1/2 tsp. vanilla extract
3/4 cup (100g) all-purpose flour
1/2 tsp. baking powder
2 tbsp. (20g) cocoa nibs
1-2 tbsp. brown sugar for coating

Instructions

1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside.
 
2. Add the peanut butter, butter, and brown sugar to a large bowl and mix until well combined and fluffy. Add the egg and vanilla extract and mix until well combined. Mix the flour with baking powder and add to the bowl – mix until just combined. Add the cocoa nibs and fold in. Make 12-14 balls out of the dough and roll each ball in the brown sugar to coat completely. Place with some space in between on the baking sheet and bake for about 12 minutes until slightly browned and with some cracks on the tops. Take out of the oven and let cool down on the baking sheet for some time, transfer to a wire rack and let cool down completely.
