There are not many dishes that are considered »classics«. In Germany, you can definitely put the well-known Wiener Schnitzel on the list (even though it’s from Austria). The US has a lot of these dishes that are known all over the world – the famous Waldorf Salad is just one of them. You probably guessed it already there is a connection to the Waldorf Astoria Hotel ;) Have you ever had one? The salad had its heyday in the last century, so if you are younger than 30 the chances are quite slim… ;P
I am a child of the 70s & 80s. A time when the Waldorf Salad was quite popular I’d say. If you look at cookbooks from those years, this salad is sure to be found somewhere in the section with »party recipes«. An era where food photography was extremely weird, over saturated and often not really appealing… ;P
Just kidding. Well, not really, but I am not here to judge the photography style they liked back then… my pictures are definitely different. I hope they inspire you to make the salad. I guess that’s what they wanted back then as well ;P
Anyway. This classic salad is something for the people that like the combination of sweet and tart in a dish. Sweet grapes, sour apples and tart celery. A combination of flavors that is not very common… but it works. I wonder why someone would come up with something like that ;) Many recipes use mayonnaise only for the salad dressing. Something I actually don’t fancy. I prefer my version with additional yogurt. The result is less fatty. That’s something good, right? ;P
The Waldorf Salad is great as a side dish, as a snack during the day or as a full meal… well, let’s say as a hero of your meal. You might want some bread or something else on the side ;P The salad ages well… means you can store leftovers in the fridge, and they are still good the next day. Even the apples are ok when covered completely with the dressing.
INGREDIENTS / ZUTATEN
(4-5 servings)
2 Granny Smith apples, diced
2 tsp. lemon juice
1-2 tsp. maple syrup
7 oz. (200g) red grapes (seedless), halved
5.3 oz. (150g) stalk celery, sliced
1.4 oz. (40g) toasted walnuts, roughly chopped
2 tbsp. mayonnaise
2 tbsp. yogurt
salt, pepper
(4-5 Portionen)
2 Granny Smith Äpfel, gewürfelt
2 TL Zitronensaft
1-2 TL Ahornsirup
200g rote Weintrauben (ohne Kerne), halbiert
150g Stangensellerie, in feinen Scheiben
40g geröstete Walnüsse, grob gehackt
2 EL Mayonnaise
2 EL Joghurt
Salz, Pfeffer
DIRECTIONS / ZUBEREITUNG
1. Wash and dry the apples, core, and cut into small pieces – you don’t have to peel the apples. Add to a bowl and mix with lemon juice and maple syrup. Set aside.
2. Wash and dry the grapes – cut each grape in half. Clean the celery stalk and slice very finely. Chop the toasted walnuts roughly. Add everything to the bowl with apples and mix to combine.
3. Mix the mayonnaise with the yogurt, season with salt and pepper, then add to the bowl and mix everything to combine. Place the Waldorf salad in the fridge for at least 30 minutes before serving. The salad is excellent as a side or fruity snack during the day ;)
1. Die Äpfel waschen, trocknen, entkernen und in kleine Stücke schneiden – die Äpfel müssen nicht geschält werden. In eine Schüssel geben und mit Zitronensaft und Ahornsirup vermischen. Zur Seite stellen.
2. Die Weintrauben waschen, trocknen und halbieren. Staudensellerie säubern und in sehr feine Scheiben schneiden. Die gerösteten Walnüsse grob hacken. Alles in die Schüssel mit den Äpfeln dazugeben und vermengen.
3. Mayonnaise und Joghurt verrühren, mit Salz und Pfeffer abschmecken und dann zur Schüssel mit dem Obst/Gemüse dazugeben und alles gut vermengen. Den Waldorfsalat vor dem Servieren mindestens 30 Minuten lang in den Kühlschrank stellen. Der Salat eignet sich hervorragend als Beilage oder fruchtiger Snack zwischendurch ;)
