Almost everybody loves donuts, right? What I don’t like so much is the fat. The ones you fry in fat are soaked in fat and taste like fat. It can be delicious, but sometimes it’s also too much ;) You can avoid all of that fat by baking your donuts. They taste a bit different, but are still delicious! Especially the ones here with chocolate, cream cheese, and Oreos. So good! :D
I like the fried donuts, I really do, but I don’t like to make them at home. If you fry something in your kitchen, the whole house starts to smell like a deep fryer, even if you close the doors to the kitchen. Somehow the smell gets everywhere and stays for days :P So if there is a chance to avoid that, I am more than happy.
So these kind of donuts you can bake in a special donut baking tin* are perfect for me. The dough is made in no time (regular donuts take a lot of time because of the yeast dough) and you can enhance it with stuff you like – berries, nuts or chocolate for example. For these donuts, I only added cocoa powder to the basic dough. For the topping, you also have many options. Chocolate glaze, sugar glaze or in this case cream cheese frosting topped with Oreos. Really nice combination :)
You can find similar donuts in my baking book called Bake in the USA*. Those are a bit more colorful, inspired by the donuts Homer Simpson likes a lot ;P So do whatever you want. The result will be nice for sure!
INGREDIENTS / ZUTATEN
For the chocolate batter:
1 large egg
1/2 cup (100g) brown sugar
2 1/2 tbsp. (40g) melted butter
1/2 tsp. vanilla extract
1/2 cup (120ml) milk
1 cup (130g) all-purpose flour
1 tsp. baking powder
1/4 cup (30g) cocoa powder, sifted
1/4 tsp. salt
For the frosting:
3.5 oz. (100g) cream cheese, at room temperature
2 tbsp. (30g) butter, at room temperature
1/2 tsp. vanilla extract
3/4 cup (100g) confectioners’ sugar
1-2 tbsp. heavy cream (optional)
4-5 Oreo cookies, crumbled
Für den Schokoladenteig:
1 Ei (L)
100g brauner Zucker
40g Butter, geschmolzen
1/2 TL Vanille Extrakt
120ml Milch
130g Mehl (Type 405)
1 TL Backpulver
30g Kakao, gesiebt
1/4 TL Salz
Für das Frosting:
100g Frischkäse (Zimmertemperatur)
30g weiche Butter
1/2 TL Vanille Extrakt
100g Puderzucker
4-5 Oreo Kekse, zerkrümelt
DIRECTIONS / ZUBEREITUNG
2. In a large bowl mix the egg with sugar, melted butter, vanilla extract, and milk until well combined. Mix the flour with baking powder, cocoa powder, and salt and add to the bowl – mix until just combined. Do not overmix! Fill the batter into the prepared donut pan and bake for 10-12 minutes or until a toothpick inserted in center comes out clean. Take out of the oven, let cool down for a moment, then remove from the pan and let cool down completely on a wire rack.
3. For the frosting add the cream cheese and butter to a large bowl and mix until well combined. Add the vanilla extract and mix in. Gradually add the confectioners’ sugar and mix in until well combined. Spread the frosting on top of the cooled donuts and sprinkle with the crumbled Oreo cookies. Serve with a glass of milk ;)
2. Das Ei mit dem Zucker, geschmolzene Butter, Vanille Extrakt und Milch in einer großen Schüssel verrühren. Das Mehl mit Backpulver, Kakao und Salz vermischen und dann zur Schüssel dazugeben und unterrühren (aber nicht zu viel rühren!). Den Teig auf die Donut-Formen verteilen (die Mitte sollte frei bleiben) und dann für 10-12 Minuten backen. Mit einem Zahnstocher testen, ob noch Teig kleben bleibt und dann aus dem Ofen nehmen und in der Form etwas abkühlen lassen. Die Donuts aus der Form lösen und auf einem Kuchengitter komplett auskühlen lassen.
3. Für das Frosting den Frischkäse mit der weichen Butter in einer großen Schüssel glattrühren, Vanille Extrakt zugeben und unterrühren. Den Puderzucker nach und nach Zugeben und unterrühren, bis eine glatte Masse entsteht (wird mit Zugabe des Puderzucker flüssiger werden). Das Frosting auf den Donuts verteilen und dann die zerbröselten Oreos darauf verteilen. Mit einem Glas Milch servieren ;)
