There are about one trillion banana bread recipes out there. I assume, during the pandemic, many more have been added to that list. Back then, everyone used overripe bananas for baking banana bread ;P Today, I’m sharing another new recipe that can be added to the never-ending list – a delicious Banana Bread with Chocolate & Walnuts. Of course, I’m not reinventing the »banana bread wheel«, but we like this version a lot and thought it should be shared with everyone ;)
It’s been some time since the pandemic or »banana bread season«, as we like to call it these days. Somehow it feels like 10 years have already passed, but of course, it wasn’t that long ago. When everyone was stuck at home, many people discovered their hidden passion for baking. Sometimes with more, sometimes with less success. Some managed to keep their sourdough alive and made sourdough bread over and over again, – others had half-rotten bananas lying around in the kitchen and just didn’t want to throw them away. Oh, what a time it has been ;P
All joking aside! Banana bread has always been and will continue to be a good way to use up overripe bananas. When those yellow fellas slowly turn brown or even black and nobody really wants to eat them anymore, they are the perfect candidates for banana bread! The starch in the bananas has slowly turned into sugar and makes banana bread really delicious!
If you only have fresh yellow bananas lying around in your kitchen, you don’t have to wait a few days in order to make this banana bread. There is a little shortcut for those in a hurry as well as for last-minute bakers. Simply place the bananas in the oven at 120°-150°C (250°-300F) for about 15 minutes or so and bake them until the skin turns black. Take ’em out, leave to cool, and you have perfectly ripe bananas ready for baking. A very simple and effective way to speed things up ;)
In our kitchen, some bananas turn black all by themselves. When there are a bunch of bananas in the fruit basket, there are always a few leftovers that turn quite brown or even black. Somehow, after a few days, you forget that something is waiting for you to be eaten. But as I said – that’s not a problem for me, and actually something positive. If that happens, I have something tasty for a baking recipe ;P
I’ve already mentioned it – there are plenty of banana bread recipes out there. A few of them you can find here on the blog. One of my favorite banana bread recipes is my delicious (vegan) Walnut & Chocolate Banana Bread. Very similar to this one… but vegan ;P If you like the combination of walnuts and bananas you might want to try my Walnut Banana Bread. As the name suggests, there are walnuts in the banana bread ;P
There is a lot more you can do with overripe bananas – not only good old banana bread. You should definitely try my easy Banana Chocolate Chip Cookies. They are so good! Or what about some Banana Bread Scones or Banana Bread Streusel Muffins? Similar to banana bread but not the same ;P I think you should try them all!
INGREDIENTS / ZUTATEN
1/2 cup (120g) butter, at room temperature
1/2 cup (100g) sugar
1/2 cup (100g) brown sugar
2 medium eggs
1/2 cup (120ml) buttermilk
1 tsp. vanilla extract
3 cups (390g) spelt flour
2 tsp. baking powder
1 1/2 baking soda
1 tsp. salt
2 medium very ripe bananas, mashed
3.5 oz. (100g) semi-sweet chocolate, chopped
1.8 oz. (50g) walnuts, chopped
an additional banana for decoration
120g sehr weiche Butter
100g Zucker
100g brauner Zucker
2 Eier (M)
120ml Buttermilch
1 TL Vanille Extrakt
390g Dinkelmehl (Type 630)
2 TL Backpulver
1 1/2 TL Natron
1 TL Salz
2 mittelgroße (sehr reife) Bananen, zerdrückt
100g Zartbitterschokolade, gehackt
50g Walnüsse, gehackt
eine zusätzliche Banane für die Dekoration
DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 350°F (180°C). Grease a loaf pan* (about 9.5×5 inches) lightly and line it with a piece of baking parchment. Set aside. Mash the two bananas, chop the chocolate and walnuts coarsely, and set them aside.
2. Add the butter and both sugars to a large bowl and mix until light and fluffy. Add the eggs one at a time and mix well after each addition. Next, add the buttermilk and vanilla extract and stir in. Mix the spelt flour with baking powder, baking soda, and salt in a separate bowl then add to the large bowl and mix until just combined. Add the mashed bananas, chopped chocolate, and walnuts and fold in. Pour the batter into the prepared loaf pan and smooth out the top. Cut the banana for the decoration in half lengthways and place on top of the batter. Bake the banana bread for about 60-70 minutes or until a wooden skewer inserted into the center of the cake comes out clean.
3. Let the banana bread cool down for about 10-15 minutes inside the loaf pan, then remove and let cool down completely on a wire rack.
1. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Eine Kastenform* (ca. 24x13cm) leicht einfetten und mit einem Streifen Backpapier auslegen. Die beiden Bananen zerdrücken. Die Schokolade und die Walnüsse grob hacken und zur Seite stellen.
2. Die weiche Butter und beide Zuckersorten in eine große Rührschüssel geben und aufschlagen, bis sich beides gut verbunden hat. Die Eier einzeln dazugeben und jeweils gut unterrühren. Buttermilch und Vanille Extrakt dazugeben und unterrühren. Das Dinkelmehl mit Backpulver, Natron und Salz in einer separaten Schüssel vermischen und dann zur großen Rührschüssel dazugeben und nur kurz unterrühren. Die zerdrückten Bananen, gehackte Schokolade und Walnüsse dazugeben und unterheben. Den Teig in die vorbereitete Form füllen und glatt streichen. Die Banane für die Dekoration längs halbieren und auf den Teig legen. Das Bananenbrot für etwa 60-70 Minuten backen. Mit einem Holzspieß testen, ob noch Teig kleben bleibt und das Bananenbrot erst herausholen, wenn dieser sauber herauskommt.
3. Das fertige Bananenbrot für etwa 10-15 Minuten in der Form abkühlen lassen, dann vorsichtig herauslösen und auf einem Kuchengitter komplett auskühlen lassen.
