Description

Delicious vegan and very chocolaty Avocado Pecan Chocolate Cookies – almost healthy ;)


Ingredients

1 tbsp. chia seeds
3 tbsp. water
1 ripe avocado (about 3 oz. of flesh), mashed
1/4 cup (50g) raw cane sugar
1/2 tsp. vanilla extract
1.8 oz. (50g) cocoa powder
1/3 cup (40g) wholemeal spelt flour
1/2 tsp. baking powder
1 tbsp. oats milk
1.8 oz. (50g) semi-sweet chocolate, chopped
1.4 oz. (40g) pecans, chopped

Instructions

1. Preheat the oven to 325°F (160°C). Line a baking sheet with baking parchment and set aside. Mix the chia seeds with the water and let soak for about 5-8 minutes.
 
2. Add the avocado flesh to a large bowl and mash until you get a smooth green paste. Add the sugar, vanilla extract, and the soaked chia seeds and mix until well combined. Mix the cocoa powder with flour and baking powder in a separate bowl. Add together with the oats milk to the large bowl and mix until well combined. Add the chopped chocolate and pecans and fold in. Use a cookie scoop or tablespoons and place dough portions on the baking sheet, flatten a bit and bake for 9-10 minutes. Take out of the oven and let cool down on a wire rack.
