We prepare simple stews almost every week in autumn and winter. We usually have all the ingredients you need for a stew at home. Even for this simple Stew with Beans, Lentils & Knackwurst, we typically have everything that’s needed in the cupboards or fridge. It never hurts to keep a few dry beans and lentils at hand ;P
Stews are something that is normally served during the colder months of the year – but that’s not the case for us here. We love delicious stews all year round. Like this simple Vegan Lentil & Potato Stew. It is super easy to prepare and quick on the table. The perfect meal if you don’t want to work a lot on a weeknight to prepare dinner. We all feel the same in this kind of situation – the quicker, the better ;P
As soon as the temperatures are falling the »stew season« starts in our house. There is nothing better than sitting on the sofa, wrapped in a cozy blanket and having a big bowl of stew in front of you. Warmed by the blanket on the outside and by the stew from the inside. So good! This Vegan Lentil & Bean Stew will do this job perfectly. Well… and it’s also delicious. And good for your body I guess – beans and lentils are great for your digestive system ;P
If you ask someone in Germany about the origin of lentil stews you will sometimes get the answer »it’s probably something that is coming from here«. It’s a dish everybody knows from their grandparents, so it must be something we invented ;P But that is not the case at all. Of course! ;) Dishes like this one here have been around since the dawn of time. Well, almost. Lentils have been cultivated and used for thousands of years. This version of a classic lentil stew here is called Lentejas con Chorizo – means »Lentils with Chorizo«. That was easy, right? ;P
I have no clue what you normally serve for dinner, but do you often make dishes with legumes? We always loved to make dishes with beans and lentils but back in the days (means several years ago) we did not cook them that often. Over time this turned into something we do now basically once a week. You might ask why – well because it’s good for your body and your digestive system ;) Legumes have a lot of fiber and your body will thank you if you offer that on a regular basis. Make an easy Mixed Legumes Stew like this one here from time to time – it’s not only delicious but it will also be good for your wellbeing.
When it is wet and cold outside, a warming stew with coconut, pumpkin, and legumes is just perfect! A delicious vegan stew with loads of veggies, which could be considered “healthy”, thanks to a large amount of fiber from the lentils and beans. Well… at least “healthier” than a big pot of pasta with a heavy and fatty creamy sauce, right?! I’m pretty sure you figured that out already…. ;P
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
