Happy birthday to meeeee! Just because nobody is baking me a cake (and I wouldn’t want one anyway), I decided to make treat myself with a little recipe. A little delicious snack I like to nibble on whenever there is the chance: Popcorn Chicken (KFC-style)! Soooooo delicious! I could eat several pots of this. Every day. But of course, I won’t ;)
I’m actually not a big fan of KFC, I have to be honest. It’s not because I don’t like fast food in general – that is certainly not the problem here, but since I lived in the U.S. fast-food chains like KFC and Subway have somehow ended up at the bottom of the list of restaurants I would visit if I had to eat something ;) Subway is at the bottom of the list for various reasons I don’t want to go into here (well… ok, I got a food poisoning from a sandwich once). Well and KFC, even though they do have some tasty stuff, overall the menu is nothing that really convinced me to go there more often. What they do well at KFC is popcorn chicken… or better said “what they were good at”, because popcorn chicken is no longer on the menu I think. Here in Germany they still have something called “Filet Bites”… which comes very close to the original popcorn chicken ;)
Anyway. Something similar to popcorn chicken can be found at many fast-food restaurants these days – no matter if they specialize in chicken or not. The snack is very popular and relatively easy to prepare. With the right marinade and sauces, you can get a really nice dish! Even though it’s not considered as “healthy” with all the fat from frying the chicken bites and the calories that come along with it… it’s simply delicious! Sorry for not being sorry ;P
Well… even though we are not making them often – only if there is already fat in a pot from frying something else – popcorn chicken is really delicious and I love it. Well seasoned with some Sriracha Mayo. So good! In case you try the recipe, I am sure you will agree.
By the way – I really recommend using “panko” for this recipe here instead of regular breadcrumbs. The Japanese breadcrumbs make the coating much more crispy and the flavor is much nicer. You can get panko in many supermarkets these days – if not, then definitely in an Asian supermarket.
INGREDIENTS / ZUTATEN
For the marinated chicken:
14 oz. (400g) chicken breast
2 tbsp. soy sauce
1 tsp. mirin
1 tsp. honey
1/4 tsp. ginger powder
1/4 tsp. garlic powder
1/4 tsp. cornstarch
For the spice mix:
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. dried oregano
1/2 tsp. chili flakes
1/2 tsp. sea salt
For the coating:
1 cup (130g) spelt flour
3/4 cup (180ml) buttermilk
1- 1 1/2 cups (90-140g) panko bread crumbs
salt, pepper
vegetable oil for frying
Für das marinierte Huhn:
400g Hähnchenbrust
2 EL Sojasoße
1 TL Mirin
1 TL Honig
1/4 TL Ingwer, granuliert
1/4 TL Knoblauch, granuliert
1/4 TL Speisestärke
Für die Würzmischung:
1/2 TL Zwiebeln, granuliert
1/2 TL Knoblauch, granuliert
1/2 TL Oregano, getrocknet
1/2 TL Chiliflocken
1/2 TL Meersalz
Für die Ummantelung:
130g Dinkelmehl (Type 630)
180ml Buttermilch
90-140g Panko (Paniermehl)
Salz, Pfeffer
Pflanzenöl zum Frittieren
DIRECTIONS / ZUBEREITUNG
2. For the spice mix add onion powder, garlic powder, dried oregano, chili flakes, and salt to a small bowl and mix until well combined. Set aside until needed.
3. Add the ingredients for the coating into separate shallow bowls. Season the flour and panko bread crumbs with some salt and pepper. Set up the bowls next to each other – flour first, then buttermilk, and panko at the end. Roll the chicken pieces in the flour first to cover completely, then dip into the buttermilk and lastly in the panko to coat them with the bread crumbs. Place on a plate or wire rack and continue preparing the chicken pieces.
4. Add oil to a pot and heat up to about 350°F-375°F (175°C-190°C). You don’t need a full pot of oil to fry the popcorn chicken – the pieces should be able to swim and not touch the bottom of the pot, so 1.5-2 inches (4-5cm) should be enough. I normally use a smaller pot to use less oil, but that also means you have to do the frying in several more batches. As soon as the oil is hot add some chicken pieces to the pot – don’t add too many or the temperature of the oil will drop too much. Fry from all sides until golden brown. Take out of the oil and let drain on a piece of kitchen paper, then add to a bowl and sprinkle the still hot popcorn chicken with the spice mix. Serve with dipping sauce – for example, sriracha mayo or curry ketchup.

3. Die Zutaten für die Ummantelung in separate, flache Schüsseln füllen. Das Mehl und das Panko mit Salz und Pfeffer würzen. Die Schüsseln nebeneinander stellen – zuerst Mehl, dann die Buttermilch und zuletzt das Panko. Die marinierten Hähnchenstücke zuerst im Mehl wälzen, dann kurz in die Buttermilch tauchen und dann in der Schüssel mit dem Panko rollen, bis sie komplett mit den Krümeln bedeckt sind. Auf einen Teller oder ein Kuchengitter legen.
4. Wenn alle Hähnchenstücke paniert sind, das Öl in einen Topf füllen und auf etwa 175°C-190°C (350°F-375°F) aufheizen. Der Topf muss nicht bis zum Rand mit Öl gefüllt sein – wenn die Hähnchenstücke schwimmen können und den Boden nicht berühren, reicht das schon (etwa 4-5cm sollten passen). Ich verwende normalerweise einen kleinen Topf, damit ich nicht so viel Öl verwenden muss – das bedeutet allerdings auch, dass man etwas länger braucht, weil nicht so viel auf einmal frittiert werden kann. Die Hähnchenstücke ins heiße Öl gleiten lassen (nicht zu viele auf einmal, sonst fällt die Temperatur zu stark) und goldbraun frittieren. Aus dem Öl fischen und dann auf einem Stück Küchenrolle abtropfen lassen. Die abgetropften Teile in eine Schüssel geben (sollten noch heiß sein) und mit der Würzmischung bestreuen. Mit einer Soße zum Dippen servieren – z.B. Sriracha Mayo oder Curry Ketchup.
