Simple & Easy Italian Pasta Salad

I like me a good salad. Especially in summer when it’s warm outside. The time of year when you want to spend as little time as possible in the (warm) kitchen ;) Isn’t it much better to spend the time outside on the terrace or in the garden? You can prepare your dinner outside as well… on a grill, for example. Who would have thought it ;P For this simple Italian Pasta Salad you have to plan a little kitchen time though because – unless you can cook some pasta on your grill. Some of these big boys can do that, right? ;)

They wilt quite fast while the beets themselves are still good for days or even weeks. If you go to a farmer’s market you might be lucky, but even there the leaves are off most of the time. The BBQ season is upon us. Yay! Some die-hards never stopped grilling and treat themselves to some grilled meat, sausages, and veggies even in the depths of winter on the terrace or balcony. We are quite “seasonally” when it comes to BBQ. If you can not sit comfortably together outdoors we are not doing it. No mam ;P A delicious salad like this Simple & Easy Red Beet Salad, however, is something we like to prepare all year round. No need to fire up a grill for that. A stove (or oven), but not a grill ;P

If you like tacos I am pretty sure you will love these Taco Bowls. They are practically everything that makes a delicious taco, just in a different form. Some would say “deconstructed”. I just say delicious! Although the recipe looks quite extensive, all very easy to prepare. What more could you want for dinner? Maybe a beer to go with it and possibly some company. The bowl is a bit too much for just one person ;P

Summer is almost over… well, probably not just “almost”. It got quite cold this week already. But as long as it is not raining, you can still heat up the grill for some nice bbq on the balcony. I know many guys that still like to do a bbq even when it’s snowing outside ;P Well… we are not there yet. This Mediterranean Chickpea Salad is a great side for some grilled meat or veggies but also nice as a main dish all year round. Along with some bread it’s the perfect lunch salad you can take to the office or eat at home on the sofa (if you work from home) :P

Orzo & Chickpea Summer Salad

Summer is the time for a nice barbecue. At least, if the weather plays along. This year, the weather is not really playing along here in Germany. Bummer ;P A lot of rain. Well… we had some dry days in between, so there was a chance to heat up the grill and throw some meat and (fake) sausages on top. Along with that we normally also have some salad. Besides the classics – potato salad and pasta salad – we love to make this delicious Summer Salad with Orzo and Chickpeas. Our guests love it. Crowd pleaser ;)
