Summertime is the time for berries! Do you like raspberries as much as I do? It would be so nice if raspberries grow all year long in my garden. So many things you could make. Smoothies, Ice cream, cakes or these Raspberry Curd Cheese Cakes…

The weather is not the best right now. Sun, rain, sun, rain… and more rain ;) Luckily I just had a little vacation in Spain with lots of sun and nice temperatures. So to be honest – I’m fine with the weather here right now. If I look back at Spain at the moment with over 40°C in the shade it’s even better here than there. :P Not even one of these popsicles would help with that kind of heat, so let’s be happy with the temperatures we have and enjoy some ice cream. ;)
I’ve got another batch of cupcakes for you today. I haven’t made any for quite some time, now this is the second recipe within two weeks (the last ones were chocolate hi-hat cupcakes). Today I got some delicious vanilla cupcakes with a raspberry filling and a Swiss meringue buttercream topping. So good!
In Winter it is always a problem getting fresh fruit and berries. Many stores just don’t sell them and the ones that do are f***ing expensive. Excuse my French ;)) So what can you do to skip the high prices and stuff that has been traveling all around the globe to get into your shopping basket?
Raspberries are in season when it’s the hottest in summer. Firing up the oven to bake a Red Velvet Raspberry White Chocolate Cake may not be everyone’s cup of tea, but if you want something delicious, you just have to do it. You can’t live on no-bake cakes alone in summer. ;P
This cake is… a mess. Literally. An Eton Mess (Cake)! I made prettier cakes to be honest, but it is still a delicious cake… So grab the last fresh berries from the farmers market and bring back a bit of summer felling – you won’t regret it!
