As you know, I asked several food bloggers around the globe (well almost – more like all over Germany and Austria) to join me for Cookie Friday. So today you have the chance to meet Sia from Sia’s Soulfood. She made some delicious looking cookies with one of my favorite flavor combinations: Lemon and coconut! Mmmmm… :)

I´m very pleased to be Marc’s guest today. Marc’s Cookie Friday blows my mind ;-) and I love the idea to create variant cookie recipes each friday. That´s why I´m excited to share a cookie recipe with you today.

Now it´s about Cookies time, right? :-) I have some delicious lemon coconut cookies. The cookie dough is done very quickly, the cookies are ready in a second and will be eaten up in the next second. I really love the combination of lemon and coconut. So if you love this combination too you have to taste these cookies.

INGREDIENTS / ZUTATEN
1/3 cup (75g) butter, softened
2/5 cup (80g) sugar
1 pinch of salt
1 egg
1 tsp. vanilla extract
1 1/4 cups (160g) all-purpose flour
1 tsp. baking powder
zest of 1 organic lemon and juice of 1/2 lemon
1.75 oz. (50g) coconut flakes plus 1 tbsp. to sprinkle
75g weiche Butter
80g Zucker
1 Prise Salz
1 Ei
1 TL Vanille Extrakt
160g Mehl
1 TL Backpulver
Schalenabrieb von 1 (Bio-)Zitrone und Saft von 1/2 Zitrone
50g Kokosraspel plus 1 EL zum Bestreuen
DIRECTIONS / ZUBEREITUNG
2. Mix butter, sugar and salt in a large bowl and mix until light and fluffy. Add the egg and vanilla extract and mix until well combined. Stir in flour and baking soda. Add lemon cest, lemon juice and coconut flakes and mix.
3. Use two teaspoons to form 12 dough balls and place about 2 inches apart onto the baking sheet – flatten a bit. Dust the cookies with the remaining coconut flakes. Bake in the oven for 10-12 minutes – until slightly browned on the edges. Leave on the tray for a couple minutes to firm up and then transfer to a cooling rack.
2. Butter, Zucker und Salz schaumig rühren. Das Ei und Vanille Extrakt hinzufügen und gut unterrühren. Mehl mit Backpulver vermischen und zur Butter-Zucker-Mischung hinzufügen und kurz unterrühren bis alles gut vermengt ist. Nun die Kokosraspel und die Zitronenschale und den Zitronensaft unterrühren.
3. Mit Hilfe von zwei Teelöffeln 12 Klekse mit Abstand auf ein mit Backpapier belegtes Blech setzen und etwas flach drücken. Mit den restlichen Kokosraspeln bestreuen und die Cookies auf der mittleren Schiene für etwa 10-12 Minuten backen. Die Cookies aus dem Ofen nehmen und erst auf dem Blech ein paar Minuten, dann auf einem Kuchengitter auskühlen lassen.
