Lemon Coconut Cookies

Ingredients

  • 1/3 cup (75g) butter, softened
  • 2/5 cup (80g) sugar
  • 1 pinch of salt
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1 tsp. baking powder
  • zest of 1 organic lemon and juice of 1/2 lemon
  • 1.75 oz. (50g) coconut flakes plus 1 tbsp. to sprinkle

Instructions

  1. Preheat the oven to 350˚F (180°C). Line a baking sheet with baking parchment.
  2. Mix butter, sugar and salt in a large bowl and mix until light and fluffy. Add the egg and vanilla extract and mix until well combined. Stir in flour and baking soda. Add lemon cest, lemon juice and coconut flakes and mix.
  3. Use two teaspoons to form 12 dough balls and place about 2 inches apart onto the baking sheet – flatten a bit. Dust the cookies with the remaining coconut flakes. Bake in the oven for 10-12 minutes – until slightly browned on the edges. Leave on the tray for a couple minutes to firm up and then transfer to a cooling rack.
