Today I have again some super easy cookies for Cookie Friday! No cookie sandwich, nothin’ complicated dipped in chocolate – just simple and delicious cookies. These little fellas here are easy vanilla cookies with rainbow sprinkles to make them look a bit more fun. Worked, right? :P
I really like those cookies where you have a filling with chocolate or caramel which is oozing out when you take a bit… or the ones that are decorated with chocolate and other stuff. But sometimes there is just no time to make cookies like that. Sometimes you have to go with a simple cookie dough recipe and “enhance” it just a little bit. If the cookie recipe is good, you will still get awesome cookies :P
These cookies are simple cookies with just some rainbow sprinkles inside. Kids love them and you can also make them pretty easy with them. You prepare the dough and they throw in the sprinkles and 1,2,3… cookies are done and ready to enjoy.
Make sure you get “good” rainbow sprinkles with bright colors. The sprinkles they normally sell in supermarkets here in Germany are not really good for that. The colors are not very strong and they also bleed out quickly when you add them to the dough. I get mine from the US or buy them on the internet :P

INGREDIENTS / ZUTATEN
3/4 cup (170g) butter, at room temperature
1 cup (200g) sugar
1 medium egg
1 medium egg yolk
2 tsp. vanilla extract
2 cups (260g) all-purpose flour
1/3 cup (40g) cornstarch
1 tsp. baking soda
1/2 cup (100g) rainbow sprinkles
170g weiche Butter
200g Zucker
1 Ei (M)
1 Eigelb (M)
2 TL Vanille Extrakt
260g Mehl (Type 550)
40g Speisestärke
1 TL Natron
100g Regenbogen Zuckerperlen
DIRECTIONS / ZUBEREITUNG
2. Add the butter and sugar to a large bowl and mix on high speed until light and fluffy. Add the egg and egg yolk and mix until well combined. Add the vanilla extract and mix in. Mix the flour with the cornstarch and baking soda and add to the bowl, mix until just combined. If you mix less from here on it’s better for the cookies. Add the rainbow sprinkles and fold in. Really try not to mix that much or the color of the sprinkles will bleed out into the dough. Use a cookie scoop or tablespoon and place small portions of dough on the prepared baking sheet, leave some space in between – the cookies will spread. Bake for 8-10 minutes – the cookies should not get much of a color. Take them out of the oven and let them cool down on the baking sheet for some time, then transfer to a wire rack and let cool down completely. Repeat with the remaining dough.
2. Die Butter und den Zucker in eine große Schüssel geben und auf höchster Stufe hell und luftig aufschlagen. Das Ei und Eigelb dazugeben und gut unterrühren. Vanille Extrakt ebenfalls dazugeben und unterrühren. Das Mehl mit der Stärke und Natron vermischen und dann zur Schüssel dazugeben und nur kurz unterrühren – je weniger man rührt, umso lockerer werden die Cookies. Die Zuckerperlen dazugeben und ebenfalls nur sehr kurz unterrühren – je mehr man hier rührt, umso mehr “bluten” die Zuckerperlen aus und färben den Teig unschön. Mit einem Eisportionierer oder zwei Esslöffeln kleine Teigportionen mit genügend Abstand auf das Blech setzen und dann für 8-10 Minuten backen. Die Cookies sollen nur minimal Farbe bekommen. Aus dem Ofen nehmen und auf dem Blech kurz abkühlen lassen, dann auf einem Kuchengitter komplett auskühlen lassen. Mit dem restlichen Teig wiederholen.
