When I lived in the U.S. and worked in Florida for the mouse, it was a big deal to celebrate St. Patrick’s Day. Every restaurant and bar suddenly found its Irish roots, at the parks the parades and everything else suddenly turned green – Americans really like to decorate everything for their holidays.
In Chicago they even color a river green ;) Everything from decorations to food and drinks was suddenly available in green… and I have to say I liked it! I also like the Incredible Hulk – maybe there is a connection. This has nothing to do with this Irish Apple Cake, but hey… ;)
Here in Germany it’s not really common to celebrate St. Patrick’s Day (outside of an Irish Pub) – though I learned we actually had a parade this year in Kreuzberg (one of the neighborhoods here in Berlin) Anyway. I wanted to make something for St. Patrick’s and was looking for typical recipes. I found a lot of stuff made with Guinness or Irish Cream Liquor and a lot, of course, that was somehow colored green. I was not in the mood for alcohol and did not want to use food coloring, so I decided to make something simple. This delicious Irish Apple Cake. At least the recipe said it is original Irish.
It is a basic apple cake without any fancy ingredients. Easy to prepare and basically done in no time. If you want to make something special for St. Patrick’s Day you could definitely do this… without disturbing your eye with something green on your plate :P
INGREDIENTS / ZUTATEN
3 cups (390g) all-purpose flour
1/2 cup (100g) sugar
1/4 cup (50g) brown sugar
2 tsp. baking powder
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
pinch of salt
3/4 cup (170g) butter
3-4 medium-sized apples
2 large eggs
3/4 (180ml) milk
1 tsp. vanilla extract
2 tbsp. brown sugar for sprinkling
390g Mehl (Type 550)
100g Zucker
50g brauner Zucker
2 TL Backpulver
1/4 TL Muskatnuss, gemahlen
1/4 TL Nelken, gemahlen
Prise Salz
170g Butter
3-4 mittelgroße Äpfel
2 Eier (L)
180ml Milch
1 TL Vanille Extrakt
2 EL brauner Zucker zum Bestreuen
DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 375˚F (190°C). Grease an 8 inch (20cm) springform tin lightly and set aside.
2. Add the flour with the two sugars, baking powder, ground nutmeg, ground cloves, and salt to a large bowl and mix until well combined. Add the butter in small pieces and mix until you get fine crumbs – the mix should look like wet sand. Set aside.
3. Peel, core and cut the apples into (not too) small pieces. Add to the bowl and mix until the apples are completely coated with the flour mixture. Add the eggs, milk, and vanilla extract to a separate bowl and whisk to combine. Pour into the large bowl and mix with a rubber spatula until well combined – make sure to go all the way to the bottom of the bowl to get the last dry crumb incorporated. Transfer the batter to the prepared springform tin and smooth out the top. Sprinkle with the brown sugar and bake for about 45-50 minutes or until toothpick inserted in center comes out clean – the cake should have a nice golden brown color. Take out of the oven and let cool down inside the tin for about 10-15 minutes, then carefully remove and let cool down completely on a wire rack. Serve with vanilla sauce or ice cream.
1. Den Ofen auf 190°C (375°F) Ober-/Unterhitze vorheizen. Eine 20cm (8 inch) Springform leicht einfetten und zur Seite stellen.
2. Das Mehl mit den beiden Zuckersorten, Backpulver, Muskatnuss, Nelken und Salz in eine große Schüssel geben und vermischen. Butter in kleinen Stücken dazugeben und alles mit der Küchenmaschine zu feinen Krümeln verarbeiten – sollte in etwa wie nasser Sand aussehen am Ende. Zur Seite stellen.
3. Die Äpfel schälen, entkernen und in (nicht zu) kleine Stücke schneiden. In die große Schüssel geben und mit dem Mehlmix vermengen. In einer separaten Schüssel die Eier mit der Milch und dem Vanille Extrakt verquirlen und dann zur großen Schüssel dazugeben und alles mit einem Teigschaber vermengen – achtet darauf, dass auch die letzten Mehlreste am Boden der Schüssel mit eingearbeitet werden. In die vorbereitete Form füllen und glatt streichen. Mit dem braunen Zucker bestreuen und dann für etwa 45-50 Minuten goldbraun backen – mit einem Zahnstocher testen, ob noch Teig kleben bleibt und den Kuchen erst herausnehmen, wenn der Zahnstocher sauber herauskommt. Aus dem Ofen holen und etwa 10-15 Minuten in der Form abkühlen lassen, dann vorsichtig aus der Form lösen und auf einem Kuchengitter komplett auskühlen lassen. Mit Vanillesoße oder Eiscreme servieren.

Ja – ich wollte mal gegen den Strom schwimmen – und bei dem einfachen und schnellen Rezept konnte ich dann nicht Nein sagen – hat sich gelohnt – ist wirklich lecker geworden :)
