It’s Cookie Friday and since it’s “Vegan Bake Together” as well, I got some vegan cookies for you today! Delicious Peanut Butter Chocolate Fudge Cookies. Super chocolaty cookies that are completely free of dairy and animal products. Sometimes it’s not that hard to give up on eggs, butter, or milk in recipes. Give it a try and you will see yourself.

So this week is all about vegan food here. Since the beginning of the week, I published a vegan recipe each day. Andrea from Zimtkeks & Apfeltarte and I did a vegan week last year already, so this is basically the “Vegan Bake Together 2.0”. We both like to cook and bake vegan recipes, so this was a no-brainer ;)
Regular cookie recipes are normally not that difficult to turn into vegan cookie recipes. Milk can easily be replaced with plant-based alternatives. Almond milk, oats milk, or drinks made from soy – I suppose everything works here. I never had any problems so far. You just have to decide what you like best flavorwise. Eggs are also easy to replace. Sometimes you can even leave them out completely. If you think leaving it out would be a problem, you can use a chia egg as a replacement as I did in this recipe. That’s basically just some chia seeds soaked in water. You could also use some banana, but not everyone likes that added flavor in their bakes ;)

Otherwise, there is not much more to say about these cookies. They are super chocolaty and delicious! If you are a fan of chocolate and peanuts, this is definitely a great combination for you. In case you don’t like peanuts, you can use almonds or cashews instead. If you are not very familiar with vegan baking but want to make sure the cookies are vegan, you should check the peanut butter you want to use – sometimes peanut butter has honey added to enhance the flavors – but then, of course, the peanut butter is not 100% vegan anymore. Happened to me the other day because I did not read the label on the jar not properly ;P

INGREDIENTS / ZUTATEN
(6 cookies)
1 tbsp. chia
2 1/2 tbsp. water
1/2 cup (120g) peanut butter* (crunchy)
1/4 cup (50g) brown sugar
2 tbsp. cacao powder
1/2 tsp. baking soda
1/2 tsp. vanilla extract
some chopped peanuts
(6 Cookies)
1 EL Chiasamen
2 1/2 EL Wasser
120g Erdnussbutter* (crunchy)
50g brauner Zucker
2 EL Kakaopulver
1/2 TL Natron
1/2 TL Vanille Extrakt
ein paar gehackte Erdnüsse


DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 350°F (180°F). Line a baking sheet with baking parchment and set aside. Mix the chia and water in a small bowl and let sit for about 5 minutes.
2. Add the peanut butter, brown sugar, cocoa powder, baking soda, vanilla extract, and the chia mixture to a bowl and mix everything until well combined. Divide into six portions and shape each dough portion into a ball, flatten it, and place them on the prepared baking sheet. Sprinkle with some chopped peanuts and bake for about 10-11 minutes – the edges should have set, but the centers of the cookies are still soft. Take out of the oven and let cool down on the baking sheet for some time, then transfer to a wire rack and let cool down completely.
1. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen. Chia und Wasser in einer kleinen Schüssel vermischen und etwa 5 Minuten quellen lassen.
2. Erdnussbutter, Zucker, Kakao, Natron, Vanille Extrakt und die Chia-Mischung in eine Schüssel geben und alles gut miteinander verrühren. In sechs Portionen aufteilen und jede Teigportion zu einer Kugel formen, dann flach drücken und auf das vorbereitete Backblech legen. Mit gehackten Erdnüssen bestreuen und etwa 10-11 Minuten backen. Die Ränder der Cookies sollten fest geworden sein, die Mitte darf aber noch etwas weich sein. Aus dem Ofen holen und auf dem Blech einige Zeit abkühlen lassen, dann auf ein Kuchengitter setzen und komplett auskühlen lassen.
