The season for zucchini starts soon here in Germany – the ones we planted here on our balcony still need some time to get ready… but they are growing nicely so far. Several weeks and we can make this simple Zucchini Beef Skillet with homegrown zucchini I guess ;) Until then… let’s use the ones from the store. Shall we?
There are dishes that are known all over the world… and then there are dishes that are so popular even movies get named after. The movie “Ratatouille” is a good example here – although in that case, it is more likely that “Rat-a-touille” is what they are really referring to – when translated it means something like “The stirring rat”… you know that in the Disney movie a rat plays the leading role, right? ;) Anyway. Ratatouille is a delicious dish that probably fits better in late summer than late autumn, but nonetheless, I wanted to include this dish in my little diabetic-friendly recipes this week because it fits so well…
Zucchini are available everywhere right now – they pop up everywhere and are relatively cheap right now. It’s called zucchini season ;P Some people are lucky enough to grow these little green thingies in their own garden. Unfortunately, I don’t belong to that group of happy gardeners and have to get my veggies from the farmer’s market or from the supermarket. Nonetheless, those green “sausages” are gladly bought and used when in season… That’s why I got a simple and easy dish for you today with zucchini: Gnocchi Zucchini Skillet with a delicious Feta Cream.
You’ve always wanted to hide some veggies in your bakes without anyone noticing? Well, then take a look at the recipe for this delicious (Sugar-reduced) Zucchini Loaf Cake here. With this one here you can slip some vitamins into your family’s diet… and they won’t even notice. Sounds fun, right? :P
If you own a garden, you will certainly be able to harvest one or two zucchini at the moment. Provided, of course, that zucchini plants have been planted in your garden. Without that it’s going to be difficult ;) Zucchini have their peak season in July and August here in Germany, so it makes sense to do something with them when they are available from local farmers. Since I didn’t feel like baking today, I made some tasty Lentil Zucchini Pepper Fritters with a delicious Sour Cream Dip. So good!
Today I got more than one recipe for you… well, kind of. Only if you are willing to read recipes in German or know how to use Google Translator ;P Some bloggers and I created a little collection for easy recipes – all easy to prepare on a baking sheet in the oven. We call it “Fix vom Blech” here in Germany. Anyway – these Oven Veggies with Halloumi are my contribution to this little ist of delicious recipes… sorry, no cake. Again ;)
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
