No-Bake Roasted Rhubarb Biscoff Cheesecake

I have to admit it publicly: I am a rhubarb fanboy! It’s out now! If you use the “search function” on the blog and type in “rhubarb” you will easily see what I am talking about. I have served quite a lot of rhubarb recipes on this blog already. Everything from easy peasy rhubarb sheet cakes to more complicated layered rhubarb delights. Today’s delicious no-bake cheesecake with biscoff base and roasted rhubarb will extend this collection with another highlight. But be sure – this is not the end yet :P

Easy Peasy Rhubarb Almond Cake

My first “new” rhubarb recipe this year. I have to admit I’m a little behind when it comes to rhubarb. The small red stalks have been available here for quite some time already, but I didn’t start baking with them right away this year. Somehow I am not in the usual “baking mood” right now. Due to social distancing I have fewer people I can feed with my bakes so everything has gone down a bit ;) Well… but today it happened – I made a delicious Rhubarb Almond Cake and you can enjoy this one here right now… at least visually. If you want to taste it, you have to bake it yourself :P

We are right in the middle of the rhubarb season! If you walk down the rows at the farmers market you basically get those red-green stalks thrown into your face :P Well… almost. So why not collect all of that rhubarb and make something delicious? A rhubarb cake for example? I might have a nice recipe for you in case you wanna do that :P

It’s rhubarb season! Yay! End of March, the beginning of April it’s finally back – my most favorite veggie: rhubarb! As soon as I see these red/green stalks in supermarkets or on the farmers market, my mood is immediately better. Rhubarb makes the world a better place. Especially when used in cookies like these here: Rhubarb Raspberry Cookies. So good! ;)

I could not believe it… it’s rhubarb time again!? Yay!!!?! Or at least it seems it rhubarb season already. I saw it the other day in the supermarket and had to buy several of those green and red stalks. I am a rhubarb addict! Well… as you can see I made something with it: Rhubarb Strawberry Tiramisu. It’s so good ;)

It is rhubarb season here in Germany! Thank God! The red and green stalks are back in town! Yeah! Time to bake many nice things… rhubarb muffins, bread and of course cake! Most of all cake! Every cake is more delicious if you add rhubarb. Really ;) Best example is this delicious Rhubarb Strawberry Pudding Streusel Cake! So yummy!
