I love baking with rhubarb! No matter what – everything with rhubarb turns out great. I know that not everyone feels that way because it’s not everyone’s favorite veggie to bake with ;P But I can live with that. Means more rhubarb for me and everyone that actually likes those red-green stalks. A great recipe to celebrate the rhubarb season is this simple Rhubarb Streusel Coffee Cake. (Relatively) quick on the table, great texture, and extremely delicious – what more could you want?!
Spring is always the time for everything rhubarb – we love the red-green veggie here a lot! There is so much you can bake with it. Last year we started growing rhubarb at home and this year we can finally use it. So happy about it! In combination with berries, like this Rhubarb & Berry Upside Down Cake, you don’t need that much rhubarb actually – so whatever we can harvest this year will be enough I guess ;P It’s so great being able to use fruits and veggies you were cultivating at home!
As soon as rhubarb is available at the farmer’s market in spring, the world is a little better again ;) I am a big rhubarb fan and look forward to this delicious veggie to come back in March/April of every year. There is so much you can do with these red-green stalks – for example, this delicious Rhubarb Frangipane Galette. Perfect for the first coffee party with family and friends in the warming spring sun ;)
There is so much you can do with rhubarb. First and foremost, of course, sweet cakes and desserts. But also savory dishes can be “improved” with rhubarb ;) The recipe today is definitely something sweet. A classic Rhubarb Tart with a generous meringue topping. I would’ve loooved to make this recipe sugar-free so I can eat it without any remorse, but making a meringue sugar-free and then flambeé it… not a good idea. So this one here is for my sugar-loving friends out there. Like most of you out there I assume ;P
