The previous recipes here on my blog have been a bit sugary… well at least some of them. Today’s recipe is the opposite. This Lemon Coconut Drizzle Cake is made without any white sugar. A simple sugar-free cake you can enjoy without any regret ;) Well… I still do not recommend to eat the whole cake at once. Only one piece so everybody gets the chance to enjoy the cake as well. Alright?! ;)
Baking can be so easy sometimes. Not if you want to have a 5 layer cake with buttercream and different fillings, of course ;) A simple lemon cake like this Moelleux au Citron can be made by basically everyone. Even people that normally burn pre-made pizza in the oven. Well… at least I hope so. All I want today – this one here is really easy peasy and also really delicious, so you might want to think about making it someday…
When life gives you lemons… make delicious lemon bars. I don’t drink lemonade anymore, so this is the best option for me :P Well… I guess you know this old saying. If life is treating you badly (or maybe a person) – make the best out of it. No matter if it’s lemonade or lemon bars. A piece of cake definitely makes you feel better and then you can handle everything else much better, right? :P
Cookies are not only good if you make them with chocolate and nuts… even though you could think so looking at the number of cookie recipes I got for cookies with chocolate and/or cookies with nuts ;) Nope… there are many other combinations that work well. For example, everything with citrus is normally awesome – like these Lemon & Rosemary Cookies. So good!
My first draft for this article was a bit rough. I called the cake you can see an “accident” which is not true. The story of this cake is not based on an accident – it is based on stupidity. I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
