One thing that has to be on the Easter Brunch/Breakfast table: Carrot Cake! At least when I am involved in the planning. The Easter Bunny has to have something nice too – and since we know he loves carrots – a carrot cake is pretty much obvious :P This year it is going go be a special carrot cake – the 3-in-1 version… ;)

It took some time, but finally a gugelhupf in my oven again! I make them not often enough! Such an easy and delicious cake, but somehow not often on my to-do-list. That should definitely change – especially when it’s a delicious Polenta Gugelhupf with Lemon and Orange Blossom Water like this one here ;)

I always look for new things to bake for Easter – this holiday is just perfect for everything baked. Better than Christmas :P For Easter you usually have the same (hopefully nice) people around you (like Christmas), there is a lot to eat, but (unlike Christmas) the weather is normally better, and you can go out to celebrate. That’s much better, right?! ;) This simple Eierlikör Gugelhupf (Bundt Cake) with Chocolate Glaze is one of my latest discovery for Easter. Great texture, fluffy and »moist« thanks to the Eierlikör. I know you don’t like the word »moist« but that’s just a fact ;P

I love these bite-size mini bundt cakes ;) With a big mouth they are gone with the blink of an eye ;)
Well and for all the others maybe in two bites… no matter how you eat them – they are really delicious. Very chocolaty because of the chocolate inside the cake and the chocolate ganache on top. The fresh fruits on top just make them pretty much perfekt. The best thing – they also look pretty cute.
