How about an easy peasy cake with mascarpone cream, fruit layer, berries, and cookie crunch? If you ask anyone around here the answer would always be “Yes!” or “Why am I still waiting for my slice of cake?” ;) As soon as I am done with a cake here, when all pictures are taken, someone is waiting with a plate and requesting something to munch. Happened here too, of course. Luckily I used less sugar than usual in this recipe so I can also enjoy a slice. Clever, right? ;P
I haven’t baked a cheesecake in a while. I know… how could that happen?! Is there a limit for a “cheesecake-free” time? Probably ;) Well, the suffering is ending with this delicious (and sugar-free/no sugar added) Blueberry Cheesecake. I really need to bake cakes like this one here more often. Nothing can beat this creamy beauty with that blueberry topping! Mmmm…!
Using leftovers can be so easy and delicious! If you have some stale milk bread or brioche and leftover frozen fruit and berries at home you can turn them into an absolutely brilliant dessert in no time at all. A classic bread pudding with berries aka. Ofenschlupfer here in Germany! Maybe this is something for your next breakfast or when a whole gang comes over for brunch? I highly recommend it!

I made a really nice one the other day with a blueberry mascarpone filling. So good! That’s probably something new for many. Well, it’s something that can be fixed easily… by making these Potato Croissants with Blueberry Filling and Streusel Topping ;)
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
